A classic from Venice, the Bellini is a mythical Italian cocktail made with Prosecco and white peach purée. I've revisited it here with a delicious raspberry purée. It's super-easy to make, festive, gourmet and express!
The Bellini was created in 1948 by the boss of Harry's Bar in Venice, Giuseppe Cipriani, as a tribute to Giovanni Bellini (Venetian Renaissance painter), one of whose rose-orange paintings was displayed in the room.

These are the main ingredients, and the quantities can be found in the recipe card below.
- Raspberries: eat them from June to August included. Out of season, use frozen raspberries.
- Prosecco: Italy's most famous sparkling wine!
- Brown sugar: you can also replace it with sugar syrup if you have it, as it will blend much better in the cocktail.

- Crunchy appetizers: onion rings, fried mozzarella balls, fried quinoa, feta and herb balls or Italian Panzerotti
- Spreads: eggplant caviar, Ktipiti (bell pepper & feta spread), Tzatziki or this tuna, cream cheese and lime dip.
- Other appetizers of all kinds: stuffed mushrooms, cheesy Pesto pinwheels or this crack bread.

Frozen raspberries are often less sweet than fresh ones: adjust the amount of brown sugar (or sugar syrup) to suit your taste.

This cocktail has no shelf life, as it will debubble over time. Enjoy it as soon as it's ready!

Raspberry Bellini
Ingredients
- 1 ⅔ cups raspberries frozen or fresh, depending on the season
- ¼ lime
- 8,5 floz Prosecco
- 2-4 tablespoons brown sugar or 2 tablespoons of sugar syrup
- Ice cubes
- Fresh mint leaves optional
Instructions
- Using a mortar and pestle, crush your raspberries (if frozen, defrost well beforehand).
- Rub the rim of each glass with a quarter of a lime. Place a small amount of brown sugar on a flat plate. Dip the rim of each glass in brown sugar to form a pretty decoration.
- Top each with Prosecco, then raspberry purée. Add brown sugar (or sugar syrup) and a few ice cubes, taste and adjust if necessary (more brown sugar or sugar syrup, for example), then enjoy chilled!
- You can also add a few fresh mint leaves if you like.
