You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this air fryer crispy smashed potatoes.
- Potatoes - I recommend baby potatoes, Yukon gold potatoes, fingerling potatoes or Russet potatoes.
- Parmesan cheese - buy a block and grate it at the last minute if you can - it's so much better!
- Fresh garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
🌶Variations
Feel free to change this recipe to go with your tastes. I suggest several options:
- To spice up the potatoes - add a few red pepper flakes or a pinch of Cayenne pepper.
- Make it vegetarian - use Parmesan cheese that does not contain animal rennet or replace it with a cheese that you can grate and that contains no animal rennet.
- Make it vegan or dairy-free - use vegan cheese and vegan butter instead of Parmesan cheese and regular butter.
- Other flavors - replace herbes de Provence and Zaatar with Italian seasoning.
This recipe has not been tested using any other substitutions. If you do try substituting ingredients, it may not turn out as it's meant to. Please leave a comment below letting me know if it worked out!

✨How to make this easy recipe?

- Place potatoes in a saucepan of boiling water and let them cook for 20 minutes.
- Drain your potatoes well and dry them as much as you can with a clean kitchen towel or paper towel.
- In a small bowl, mix melted butter, black pepper, pressed garlic, freshly grated Parmesan, herbes de Provence and Zaatar.
- Place a sheet of parchment paper on a cutting board and put potatoes on it. Then crush each potato gently with the bottom of a glass.
- Put them in the Air Fryer basket (without the parchment paper) - you can use a spatula if it sticks to the paper.
- And brush the mixture on top of the potatoes.
- Turn your Air Fryer on at 390°F/200°C and let the potatoes cook for 10 to 12 minutes, until golden brown.
- Sprinkle with sea salt and fresh herbs of your choice, and enjoy!
👩🏻🍳 Chef's tips
- No need to peel your potatoes if they are organic - the skin is not only tasty and nutritious, but also crispy.
- Potatoes must be thoroughly cooked in water before being crushed, otherwise they may fall apart. To check that they're cooked enough, stick a knife in them: if it goes in easily and they're tender, they're done.
- Double cooking is crucial - it's what makes the potatoes so melt-in-the-mouth on the inside and crispy on the outside. The potatoes are first boiled, then baked in Air Fryer.
- One single layer - only make one single layer of potatoes in the Air Fryer basket for best results. If they overlap, they may not cook properly or be crisp. According to the size of your Air Fryer, prefer making several batches if needed.
❄️ Storage and freezing
Storage - if you have leftover smashed potatoes, let them cool and once cold, place them in an airtight container in the fridge. You'll be able to keep them for 3 to 4 days.
To reheat - place them in the preheated oven (320°F/160°C) for a few minutes, until pipping hot. Avoid the microwave, which will soften them too much.

Ingredients
- 1.1 lb potatoes baby, Yukon gold, fingerling or Russet potatoes
- ¼ cup unsalted butter melted
- ½ teaspoon black pepper
- 2 small garlic cloves pressed
- ½ cup Parmesan cheese freshly grated
- 1 tablespoon herbes de Provence
- ½ teaspoon Zaatar
- sea salt to taste
- ½ tablespoon fresh parsley chopped
Instructions
- Place potatoes in a saucepan of boiling water and let them cook for 20 minutes.
