    Quinoa salad with roasted vegetables, poached egg and herb sauce

    A hearty and comforting winter quinoa salad with roasted carrots and mushrooms, a poached egg, and a Greek yogurt and herb sauce.

    Cook Time 20 minutes mins
    Total Time 25 minutes mins

    Ingredients

    • ⅔ cup quinoa
    • 1 ¼ cups carrots
    • 1 ½ cups mushrooms
    • 2 eggs
    • ¼ cup fresh cilantro
    • ¼ cup fresh chives
    • ¼ cup fresh parsley
    • ½ cup Greek yogurt
    • ½ lemon
    • 1 tablespoon olive oil
    Metric - US Customary

    Instructions

    • In a frying pan with olive oil, place the peeled and sliced carrots. Cover and let them cook over low heat for 15 minutes.
    • Meanwhile, in a large pot of boiling water, cook the quinoa for the required time (approximately 11 minutes usually).
    • Then, add the sliced mushrooms and let them cook uncovered over medium-high heat for an additional 5 minutes.
    • While that's happening, prepare the herb sauce by mixing the Greek yogurt, cilantro, chives, parsley, and lemon juice. Taste and adjust the seasoning to your liking.
    • Also, poach your eggs by cracking them into a pot of boiling water and letting them cook for about 2 minutes 30 seconds to 3 minutes. Finally, in bowls, arrange the quinoa, roasted vegetables, poached eggs, and the herb sauce. Enjoy!
