Quinoa salad with roasted vegetables, poached egg and herb sauce
Ingredients
- ⅔ cup quinoa
- 1 ¼ cups carrots
- 1 ½ cups mushrooms
- 2 eggs
- ¼ cup fresh cilantro
- ¼ cup fresh chives
- ¼ cup fresh parsley
- ½ cup Greek yogurt
- ½ lemon
- 1 tablespoon olive oil
Instructions
- In a frying pan with olive oil, place the peeled and sliced carrots. Cover and let them cook over low heat for 15 minutes.
- Meanwhile, in a large pot of boiling water, cook the quinoa for the required time (approximately 11 minutes usually).
- Then, add the sliced mushrooms and let them cook uncovered over medium-high heat for an additional 5 minutes.
- While that's happening, prepare the herb sauce by mixing the Greek yogurt, cilantro, chives, parsley, and lemon juice. Taste and adjust the seasoning to your liking.
- Also, poach your eggs by cracking them into a pot of boiling water and letting them cook for about 2 minutes 30 seconds to 3 minutes. Finally, in bowls, arrange the quinoa, roasted vegetables, poached eggs, and the herb sauce. Enjoy!
