- Fish: I recommend white fish such as cod, monkfish or hake. It's also delicious with salmon!
- An onion: white or yellow.
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Peeled tomatoes to flavour the recipe.
- Coconut milk
- Cilantro: fresh if possible, otherwise frozen will work.
- Fresh ginger is much tastier than powdered ginger.
- Curry paste : I recommend red curry paste for this recipe. If it's too spicy for you, try yellow, which is lighter. If, on the other hand, you want a spicier one, choose the green one, which is stronger.
- Lime.

Indian fish curry
Ingredients
- 10.5 oz white fish cod, monkfish, etc...
- 4 peeled tomatoes
- 1 small onion
- 2 small garlic cloves
- 1 ⅔ cups coconut milk
- 1 teaspoon ground ginger
- 3-4 teaspoons red curry paste
- ½ lime
- fresh cilantro leaves
- salt to taste
- ⅔ cup rice
Instructions
- Finely chop the onion and garlic, then sauté in a pan with a drizzle of olive oil, until translucent.
- Then add the red curry paste (I recommend you add it as you go along, so you don't add too much all at once), ginger, peeled tomatoes, coconut milk and coarsely chopped fish.
- Cover and cook over medium heat for 5 to 10 minutes (depending on the fish you choose).
- Meanwhile, cook the rice in a pot of boiling water, following the instructions on the packaging.
- Once cooked, serve on plates, sprinkle with salt, grated lime zest, a little lime juice and fresh cilantro.
