This mustard chicken, a classic family recipe, is super easy to make, quick and economical. The moist chicken is topped with a smooth, creamy mustard sauce, making it a delicious, flavorful main course.

- Chicken fillets. They can also be cutlets or aiguillettes (take care to adjust the cooking time according to the size of the piece of poultry).
- Mustard: fine or strong, to suit your taste.
- White wine: to deglaze the chicken. You can also replace it with a little lemon juice or chicken stock.
- One yellow or white onion.
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Crème fraîche
- Herbs: chives and parsley. Fresh or frozen, make do with what you have on hand!
- I use rice as a side dish, but it can also be pasta or vegetables like boiled potatoes.

- To make this recipe dairy-free, replace the traditional crème fraîche with almond or soy cream.
🥰 Chef's tips
- Allow the onions and garlic to brown well before adding the chicken fillets: if they don't cook sufficiently, you risk ending up with crunchy bits in the sauce.
- When you add the crème fraîche: don't let it cook too long, or it may become runny.

Creamy Dijon mustard chicken
Ingredients
- 12 oz chicken breasts
- 1 tablespoon mustard
- 1 tablespoon white wine
- ½ large onion
- 1 large garlic clove
- 1 cup creme fraiche
- ½ cup rice for the side dish
- 3-4 sprigs chives
- 3-4 parsley leaves
Instructions
- Finely chop the garlic and onion and sauté in a hot frying pan over medium heat with a drizzle of olive oil, until translucent.
- Add the chicken fillets and cook, browning on both sides over high heat. Stir in the garlic and onion from time to time.
- Mix the creme fraiche and mustard in a bowl. Deglaze the chicken fillets with the white wine and, once evaporated, add the contents of the bowl, then cook for 1-2 minutes over high heat.
- Meanwhile, cook the rice (or side dish) in a pan of boiling water for the time indicated on the packaging. Serve together, sprinkled with chives and parsley.
