    This simple recipe for stir-fried noodles with chicken and vegetables is healthy, complete and quick! Made with Chinese noodles, crunchy vegetables and melting chicken, all you have to do is stir-fry with a delicious Asian sauce. A tasty dish to take you all the way to Asia.

    💙 Why you'll love them

    • They're very, very easy to make.
    • They can be kept for several days, making them ideal for batch cooking.
    • They are dairy-free (check that sauces do not contain lactose).

    🥦 Ingredients

    These are the main ingredients, and the quantities can be found in the recipe card below.

    • Chicken: I prefer thighs, which are better for this recipe. If you can't find any, use fillets or cutlets.
    • Chinese noodles: with fresh eggs. You'll find them in most supermarkets, in the world cuisine section. Or in specialized grocery stores.
    • Japanese sauces: nuoc mam sauce, oyster sauce, soy sauce and sriracha sauce.
    • Vegetables: broccoli, carrots and an onion. Depending on when you make this recipe, consider using frozen vegetables when they're not in season. Fresh broccoli is eaten from September to November included, and carrots from September to March.
    • Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
    • Sesame oil.
    • Ginger: fresh or frozen.
    • Herbs: parsley and coriander. Fresh or frozen, depending on what you have.
    • Fried onions.

    ✅ Gluten-free version

    To make this recipe gluten-free, replace traditional Chinese noodles (which are made from wheat semolina) with rice or Konjac noodles. And make sure you buy gluten-free sauces.

    ❄️Storage

    Once cold, place in an airtight container and refrigerate. This means you can keep them for 2 to 3 days.

    Chicken and veggie fried noodles

    A simple recipe with Chinese noodles, melting vegetables and chicken, stir-fried with a delicious sauce.

    Ingredients

    • 2 ⅓ cups Chinese noodles
    • 8 tablespoons soy sauce
    • 2 tablespoons fish sauce
    • 4 tablespoons brown sugar
    • 2 tablespoons oyster sauce
    • 1 teaspoon ground ginger
    • 3 ⅓ cups broccoli florets
    • ⅔ cup carrot
    • 1 small onion
    • 1 large garlic clove
    • 2 ⅓ cups chicken thighs boneless, skinless
    • 1 tablespoon sesame oil
    • Salt to taste
    • Black pepper to taste
    • 2 teaspoons Sriracha sauce
    • 3-4 sprigs parsley
    • 3-4 sprigs cilantro
    • 2 teaspoons fried onions

    Instructions

    • Chop the broccoli, peel the carrots and slice finely. Place in a pot of boiling water and allow to boil for 5 minutes.
    • Meanwhile, chop the garlic and onion finely, then drain the vegetables and sauté them with the garlic and onion in a drizzle of sesame oil in a frying pan over high heat. Season with salt and pepper and cook for a dozen minutes, stirring frequently.
    • Meanwhile, prepare the marinade by mixing the nuoc mam sauce, brown sugar, oyster sauce, ground ginger and soy sauce.
    • Remove the bones and skin from the chicken thighs, then add them to the pan with the marinade. Cook, turning occasionally, for 6-7 minutes.
    • Cook the noodles one minute less than recommended on the packaging, then drain and add to the pan.
    • Sauté for 2-3 minutes over high heat, then serve on plates. Sprinkle with parsley and cilantro, add the sriracha sauce and fried onions, and enjoy!
