These spicy chicken bites are deep-fried until they reach crispy perfection and then coated with a homemade buffalo sauce! Trust me when I say that every time I make this recipe, it's a huge hit my whole family ADORES!

- Chicken thighs - which are more tender and flavorful then chicken breasts.
- Egg - ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.

- Favorite dipping sauce - such as Tzatziki, ranch dressing, blue cheese dip or even sour cream!
- Fries - you can go for classic French fries, but sweet potato fries could be delicious! And Garlic Parmesan potatoes (even though they're not fries) would be heavenly too.
- Veggies - I love to serve these bites with grilled red peppers, grilled corn, green beans sautéed in garlic or celery sticks.
- Rice - my top 3 is regular Basmati rice, fried rice or Cantonese rice.
✨How to make these spicy buffalo chicken bites?

- Cut your chicken thighs in medium-large pieces. Place them in a large bowl, add garlic powder, paprika, herbes de Provence, salt, black pepper, egg, cornstarch and heavy cream. Mix until well combined.
- In the same time, heat a large skillet over medium heat, pour oil and heat it until it reaches 355°F/180°C.
- Add each pieces of chicken to hot oil, and deep-fry until golden on both sides. Set aside on paper towels, let them cool and deep-fry again until perfectly golden brown.
- Prepare the sauce by combining, in a pan on low heat, the Sriracha sauce, butter, honey, paprika, garlic powder and soy sauce. Stir until well combine and let it infuse for 2-3 minutes.
- Pour the sauce over the chicken pieces, add fresh chives and enjoy!

- Deep-fry twice for best results - the first cooking will evenly cook the chicken, while the second will crisp up the breading.
- The cooking time may vary according to the temperature of your frying oil.

- For the oven method - line a baking sheet with parchment paper, then place your chicken pieces (only make one single layer) on it. Bake at 420°F/220°C for 15 to 20 minutes, turning the pieces halfway through cooking.
- For the Air Fryer method - place your chicken bites in the Air Fryer basket (make one single layer) and cook at 400°F/205°C for 10 to 15 minutes, turning the pieces halfway through cooking.
I use my favorite hot sauce ever, which is Sriracha sauce, but you can completely use another one, such as Frank's Red Hot sauce!

- Make ahead - if you want to make this dish ahead, I recommend letting the chicken pieces marinating in the sauce for up to 12 hours, in an airtight container in the refrigerator.

Easy buffalo-style chicken bites recipe
Ingredients
- 1 pound chicken thighs
