🥑Ingredients
You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this avocado burger recipe.
- Homemade brioche buns - trust me, when you try brioche buns, you never go back to classic buns! And they are sooooo easy to make that I never use store-bought anymore. But you can if it's easier or quicker for you!
- Room temperature eggs - ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.
- Fresh avocado - buy it from your local farmer if you can (better for you, as you know what you buy, and for the planet). Did you know that, depending on the country of origin of your avocados, you run the risk of enriching the mafia? Find out more about green gold and alternatives in this Eco Tips.
🍗Variations
Feel free to change this recipe to go with your tastes. I suggest several options:
- Vegetarian - remove chicken.
- Vegan - replace chicken breasts with tofu, seitan, tempeh, whatever meat substitute you like! And replace the eggs and flour with a mixture of water and cornstarch to coat chicken. As for the cheddar, it can be replaced by the plant-based cheese of your choice!
- Gluten-free - use gluten-free buns and make sure your Panko breadcrumbs doesn't contain gluten.
- Proteins - replace chicken with bacon, turkey, beef, etc...
- More veggies for a healthier option - red bell peppers, tomatoes, eggplants, zucchinis, etc...
- Spice it up with Chipotle powder, Cayenne pepper or Espelette pepper.
This recipe has not been tested using any other substitutions. If you do try substituting ingredients, it may not turn out as it's meant to. Please leave a comment below letting me know if it worked out!
🍟What to serve it with?
What could go best with a burger than fries? You could go for classic French fries, sweet potato fries, Five Guys Cajun fries (best copycat) or vegetables fries, such as zucchini fries or carrot fries. And if you haven't tried them yet, go for smashed potatoes, as they are soooo delicious!
Of course, salad or grilled veggies are also an option if you want a healthier side!
✨How to make these avocado burgers?
Recipe details and quantities are in the recipe card below.
- Cut your chicken breast to the size of your burger buns. Dredge it in flour, then in beaten eggs and Panko breadcrumbs.
- Cook in a large skillet over medium-high heat with olive oil for 5 minutes on each side, until golden brown with a nice crust.
- While chicken breast is cooking, cut the burger buns in half lengthways and toast them in a toaster or frying pan with a bit olive oil.
- Mash the avocado with a fork, add salt, black pepper and lemon juice.
- Once chicken breast is cooked and the buns toasted, assemble: one half of the burger bun, 2 cheddar cheese slices, baby spinach, chicken, mashed avocado, red onion, 2 more slices of cheddar cheese and the other half of the burger bun.
- Repeat with the remaining ingredients to make the second burger.
- Place burgers on a baking tray lined with parchment paper and bake for 5 minutes at 390°F/200°C on natural convection/static heat high and low, to melt the cheddar. Enjoy!
👩🏻🍳Chef's tips
- If you want to be 100% sure your chicken breasts are food-safe, you can insert a meat thermometer into them: if the internal temperature is below 330°F/165°C (according to the US Department of Agriculture), leave them to cook for a few more minutes.
- Serve immediately, burgers are at their best when they are pipping hot!
❄️Storage
Store - let them cool and place them in an airtight container in the refrigerator for a few hours (after that, the avocado will darken). But believe me, they'll be devoured in one bite as soon as they come out of the oven.
Reheat - place them in a preheated oven (355°F/180°C) for a few minutes, until the cheese melts again and the burger is pipping hot.
