Discover these delicious zucchini waffles with cheddar cheese filling, as simple as they are delicious. They are super light, airy and very tasty, and above all, they are a change from easy waffles!

🥒 Ingredients
These are the main ingredients, and the quantities can be found in the recipe card below.
- Flour. I recommend the all-purpose flour.
- Baking powder, not to be confused with baker's yeast.
- Melted soft butter.
- Eggs - ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.
- Sparkling water.
- Cow milk.
- Cheddar: but you can replace it with another cheese you like, such as goat's cheese, feta, mozzarella, etc...
🥰 Chef's tips
- As European, I'm used to working in grams and milliliters. For this recipe, I really recommend using a digital scale, which is much more precise. That way, you'll be sure to succeed with your recipes.
- The mix of sparkling water and milk creates airy, fluffy waffles.
- Don't put your dough in the fridge: let it rest at room temperature. If the temperature is too low, the yeast won't activate because the cold will have killed it. Put a clean tea towel over your bowl and let it rest outside the fridge.
- The waffle maker is really CRUCIAL: the first one I bought made soft waffles because it wasn't powerful enough... I recommend you get one with at least 1200 Watts!
- Your waffle iron must be hot before you pour your batter into it.
- Don't stack your waffles on top of each other: the heat and humidity will soften them.
❄️Storage / freezing
If you've made too many, I recommend freezing them straight away: once they've cooled down, place them side by side in your freezer and leave them there for 2-3 hours. After that, you can place them in a freezer bag, writing the date and recipe on the bag. To eat them, toast them in a toaster until they are hot.

Zucchini waffles
Ingredients
- 1 ¼ cups all-purpose flour (150g)
- 1 ¼ teaspoons baking powder (5g)
- 1 pinch fine salt
- ¼ cup melted butter (50g)
- 1 egg
- ½ cup sparkling water (12,5cl)
- ½ cup milk (12,5cl)
- 1 ¾ cups shredded zucchini (215g)
- ⅞ cups cheddar cheese freshly grated (100g)
- butter for cooking each waffle
Instructions
- Mix the flour and baking powder in a bowl. Make a small hole in the center and add a pinch of salt, the melted butter, egg, milk and Badoit, then mix again.
- Mix well, cover the bowl with a cloth or plastic film and leave to stand for at least 1 hour at room temperature.
- Wash your zucchinis, grate them and place them in a clean tea towel. Close the cloth and squeeze out as much water as possible. Add the grated zucchini and cheddar to the bowl of batter, then mix well.
- Place a dab of butter and some waffle batter in your waffle maker. Close the device and leave to cook. Repeat until all ingredients are used up, and enjoy!
