    Rizogalo (Greek rice pudding)

    Prepared as a risotto, rizogalo is a creamy, mild and super-easy-to-make Greek rice pudding. Made with round rice cooked in milk and sweetened, I added orange blossom for an even more delicious result. A classic of grandmother's desserts, it always takes me back to childhood and is a real delight!

    To make this recipe vegan, simply replace the whole milk with the plant-based milk of your choice.

    🥰 Chef's tips

    • Rinse your pan with water and do not dry it. Add the milk directly: this trick will prevent the rice from sticking to the bottom of the pan.
    • Use whole milk
    • Taste it well at the end of cooking before placing it in a bowl to check that it is cooked.
    • If your rice pudding is too compact, add a little more milk.
    • If you find it too soft, add a little brown sugar and place it quickly under a hot grill.

    Which rice to use in a rice pudding?

    Round rice (I use risotto rice). It's the starch that gives the rice pudding its creamy texture, so don't rinse or pre-cook it, or you'll lose the starch.

    How to store rice pudding?

    Ideally, you should enjoy it as soon as it's ready. But if you've overdone it, you can wrap it in cling film and keep it in the fridge for 48 hours. It will be just a little less creamy. To warm it up, it's underneath.

    How to reheat rice pudding?

    2 techniques: in the microwave with a small ice cube or in the saucepan with a little milk. The liquid (ice cube or milk) will give the rice pudding a creamy texture.

    Rizogalo (Greek rice pudding)

    Creamy and indulgent, this Greek rice pudding with orange blossom is super-easy to make and is the perfect regressive snack.

    Ingredients

    • ⅛ cup rice short-grain, round rice (30g)
    • 1 cup whole milk (240g)
    • 1 ⅛ tablespoons sugar (12g)
    • 1 tablespoon cornstarch
    • 2 tablespoons orange blossom water flavor
    Metric - US Customary

    Instructions

    • Rinse your pan with water and do not dry it. Pour three quarters of milk, then add the rice and sugar.
    • Cover and cook over low heat (boiling very gently), stirring often, for 30 minutes.
    • At the end of the cooking time, remove the lid and add the remaining milk, cornstarch and orange blossom flavoring. Stir gently until the rizogalo reaches the right consistency.
    • Serve in a small bowl and enjoy piping hot.

    Notes

    You can replace the orange blossom with rose, cinnamon, vanilla, chocolate, maple syrup or anything else you like!
