Prepared as a risotto, rizogalo is a creamy, mild and super-easy-to-make Greek rice pudding. Made with round rice cooked in milk and sweetened, I added orange blossom for an even more delicious result. A classic of grandmother's desserts, it always takes me back to childhood and is a real delight!
💙 Why you'll love it
- It's child's play to make
- It's really delicious and takes you all the way to Greece.
- It requires very few ingredients

🐹 Vegan alternatives
To make this recipe vegan, simply replace the whole milk with the plant-based milk of your choice.
🥰 Chef's tips
- Rinse your pan with water and do not dry it. Add the milk directly: this trick will prevent the rice from sticking to the bottom of the pan.
- Use whole milk
- Taste it well at the end of cooking before placing it in a bowl to check that it is cooked.
- If your rice pudding is too compact, add a little more milk.
- If you find it too soft, add a little brown sugar and place it quickly under a hot grill.
🤔 Frequently Asked Questions
Round rice (I use risotto rice). It's the starch that gives the rice pudding its creamy texture, so don't rinse or pre-cook it, or you'll lose the starch.
Ideally, you should enjoy it as soon as it's ready. But if you've overdone it, you can wrap it in cling film and keep it in the fridge for 48 hours. It will be just a little less creamy. To warm it up, it's underneath.
2 techniques: in the microwave with a small ice cube or in the saucepan with a little milk. The liquid (ice cube or milk) will give the rice pudding a creamy texture.
