Pan con tomate is one of Spain's most popular and emblematic tapas. It's very simple to prepare: crisp, toasted bread rubbed with garlic , then topped with freshly grated tomatoes and a little coarse salt. Perfect for a quick, flavorful and refreshing summer aperitif!

These are the main ingredients, and the quantities can be found in the recipe card below.
- Bread: in Spain, country-style bread is traditionally used. But you can easily replace it with a baguette, Ciabatta bread or any other bread you like (with nuts, seeds, etc.).
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- A drizzle of good quality olive oil, such as extra virgin.
- Tomatoes: in peak season from June to September. Take them ripe. Traditionally, pan con tomate calls for classic red tomatoes, but you can also use yellow pineapple tomatoes or green Green Zebra tomatoes to add color to your plate!
- Coarse salt and black pepper for seasoning.
✨Customize pan con tomate
You can add avocado and ham. Olives, fresh herbs, anchovies, peppers or cheese can also be added.

To make this recipe gluten-free, simply buy gluten-free bread, which is becoming increasingly available.

Use high-quality ingredients, whether bread, olive oil or tomatoes. There are only a few ingredients in this recipe, so it might as well be as delicious as possible!
💡 Frequently Asked Questions
I wouldn't recommend it: pan con tomate tastes much better freshly made. And it's really quick to make, so there's no need to prepare it in advance!
You can use a dry, fresh rosé wine, such as a Provence rosé. Its acidity and fruity aromas go well with tomatoes.
Dry, crisp white wine can also be an option: Sauvignon Blanc, Vermentino or Albariño. These wines will bring a freshness and liveliness that will complement the flavors of the pan con tomate.
If you like red wine, choose a light one, such as a Pinot Noir or Gamay. Avoid overpowering red wines.
And for lovers of sparkling wines, I recommend a dry one, like a Spanish Cava or an Italian Prosecco. The bubbles add a sensation of lightness to the tasting experience.
❄️Storage
Eat it as soon as it's ready: the tomato "purée" will soften the bread over time, making it less crisp.
But you can keep the ingredients separate to assemble them at the last minute: leave the bread in an airtight container (tupperware-style) at room temperature to maintain its crispiness, the tomato "purée" in the fridge and the peeled garlic in an airtight container in the fridge. When it's time for the aperitif, all you have to do is assemble.
I really don't recommend freezing this recipe.

Pan con tomate (spanish tomato bread)
Ingredients
- ½ baguette or another bread of your choice: country, seeds, nuts, etc...
- 1 garlic clove
- 1 tablespoon olive oil
- 2 tomatoes
- sea salt to taste
- black pepper to taste
Instructions
- Remove the skin from the garlic clove and toast your bread slices (in a toaster or frying pan with a drizzle of olive oil). Then rub the garlic clove over the two warm slices of bread.
- Wash your tomatoes well under running water, then cut them in half and grate them into a bowl. Add olive oil, sea salt and black pepper. Place on warm slices of bread and enjoy!
