    • Onions: yellow or red. I used red onions for a little more flavor, the yolks are sweeter.
    • Butter: soft.
    • Brown sugar: to give the onion confit a caramelized texture.
    • Red wine: to deglaze.
    • Balsamic vinegar: to help the caramelization process.

    ✨What to use this onion confit for?

    • Foie gras toast, perfect for Christmas or New Year's Eve.
    • Toasts of all kinds, like these mushroom, garlic and Parmesan Crostini.
    • In buckwheat crepes, like these with cheese, bacon and spinach.
    • In eggs cocotte, such as with smoked salmon or with mushrooms, spinach, leek and Beaufort cheese.
    • Good roast meat, whether chicken or beef.
    • In a burger, such as this avocado burger.

    ✅ Vegan and dairy-free version

    • To make this recipe vegan, replace the butter with vegetable margarine. Also check that your red wine and balsamic vinegar are vegan.
    • To make this recipe dairy-free, simply replace the butter with vegetable margarine.

    Don't replace slow, covered cooking with high, uncovered cooking, because that's what brings out all the flavors and makes a delicious onion confit.

    Can red wine be substituted for alcohol to make an alcohol-free confit?

    Of course! You can replace it with broth (vegetable or poultry) or good-quality fruit juice(apples, grapes or oranges, for example). If you choose the second option, reduce the amount of brown sugar slightly.

    ❄️Storage

    Place the onion confit in a sterilized jam jar and chill in the fridge. It will keep for about 2 weeks.

    It can harden in the fridge, but if you want it nice and soft just before serving, pop it in the microwave for a few seconds.

    French onion confit

    This easy caramelized onion confit is tasty and perfect for the festive season! Believe me, you're in for a treat...

    Ingredients

    • 1 large red onion
    • 1 teaspoon unsalted butter
    • 1 tablespoon brown sugar
    • 1 tablespoon red wine
    • 1 tablespoon Balsamic vinegar
    • Salt to taste
    • Black pepper to taste

    Instructions

    • Finely slice the onion into strips.
    • In a frying pan, place the butter and your onion strips. Cook over medium heat, stirring occasionally, until translucent.
    • Once translucent, add the balsamic vinegar and brown sugar, and leave to caramelize for a few minutes.
    • Deglaze with red wine, season with salt and pepper, and cook over a low heat, covered, for around 30 minutes, stirring occasionally.
