Place the onion confit in a sterilized jam jar and chill in the fridge. It will keep for about 2 weeks.
It can harden in the fridge, but if you want it nice and soft just before serving, pop it in the microwave for a few seconds.

French onion confit
Ingredients
- 1 large red onion
- 1 teaspoon unsalted butter
- 1 tablespoon brown sugar
- 1 tablespoon red wine
- 1 tablespoon Balsamic vinegar
- Salt to taste
- Black pepper to taste
Instructions
- Finely slice the onion into strips.
- In a frying pan, place the butter and your onion strips. Cook over medium heat, stirring occasionally, until translucent.
- Once translucent, add the balsamic vinegar and brown sugar, and leave to caramelize for a few minutes.
- Deglaze with red wine, season with salt and pepper, and cook over a low heat, covered, for around 30 minutes, stirring occasionally.
