Leek salad with avocado and shrimps
Ingredients
- 2 leeks
- 1 tablespoon butter
- 2 good handfuls of lamb's lettuce
- 1 avocado
- 1 cup shrimps cooked
- 1 tablespoon olive oil
- 1 teaspoon Balsamic vinegar
- 1 tablespoon fried onions
- Salt to taste
- Pepper to taste
Instructions
- Slice the leeks lengthwise and run them under water to remove the soil. Remove the first layer of "skin".
- Put a knob of butter and the thinly sliced leeks in a hot frying pan. Place over low heat, cover and cook for around 20 minutes, stirring occasionally.
- Once cooked, place the lamb's lettuce in bowls and add the leek slices, sliced avocado, shrimps, a drizzle of olive oil, balsamic vinegar, salt, pepper and fried onions. Enjoy!
