    Leek salad with avocado and shrimps

    Ready in 25 minutes, this gourmet salad is ideal for a quick lunch!

    Ingredients

    • 2 leeks
    • 1 tablespoon butter
    • 2 good handfuls of lamb's lettuce
    • 1 avocado
    • 1 cup shrimps cooked
    • 1 tablespoon olive oil
    • 1 teaspoon Balsamic vinegar
    • 1 tablespoon fried onions
    • Salt to taste
    • Pepper to taste

    Instructions

    • Slice the leeks lengthwise and run them under water to remove the soil. Remove the first layer of "skin".
    • Put a knob of butter and the thinly sliced leeks in a hot frying pan. Place over low heat, cover and cook for around 20 minutes, stirring occasionally.
    • Once cooked, place the lamb's lettuce in bowls and add the leek slices, sliced avocado, shrimps, a drizzle of olive oil, balsamic vinegar, salt, pepper and fried onions. Enjoy!
