Slice the leeks lengthwise and run them under water to remove the soil. Remove the first layer of "skin".
Put a knob of butter and the thinly sliced leeks in a hot frying pan. Place over low heat, cover and cook for around 20 minutes, stirring occasionally.
Once cooked, place the lamb's lettuce in bowls and add the leek slices, sliced avocado, shrimps, a drizzle of olive oil, balsamic vinegar, salt, pepper and fried onions. Enjoy!
