    These oven-roasted Hasselback potatoes with herbs and spices are as melt-in-the-mouth on the inside as they are crispy on the outside. Believe me, these pretty little fans are sure to impress your guests!

    They are ideal as a side dish to this chicken in Chimichurri sauce or this easy French cordon bleu or this Karaage chicken (Korean fried chicken) .

    These are the main ingredients, and the quantities can be found in the recipe card below.

    • Potatoes: you have several choices when it comes to variety. I recommend Yukon Gold, Red potatoes or Fingerling potatoes.
    • Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
    • Fats: the combination of butter and oil gives a crispier finish.
    • Spices: pepper and paprika.
    • Aromatic herbs: thyme, oregano and rosemary.

    🥰 The chef's advice

    To cut Hasselback potatoes properly, use Chinese chopsticks: simply place each potato between two chopsticks and score them.

    Hasselback potatoes

    These oven-roasted Hasselback potatoes are as melt-in-the-mouth as they are crispy. Child's play to make, they will impress your guests for sure!

    Ingredients

    • 12 large potatoes Yukon Gold, Red potatoes or Fingerling potatoes
    • 2 large garlic cloves
    • Butter
    • Olive oil
    • ½ teaspoon sea salt
    • ½ teaspoon black pepper
    • 2 tablespoons thyme
    • 2 tablespoons oregano
    • 5 sprigs rosemary
    • ½ teaspoon ground sweet paprika

    Instructions

    • Wash your potatoes thoroughly. One by one, place them between chopsticks and score them. Preheat your oven to 355°F/180°C in natural convection/static heat mode, top and bottom.
    • Add the herbs, paprika, garlic cloves, sea salt and pepper.
    • Dot each potato with butter and drizzle with olive oil.
    • Place in the oven for about an hour, until the potatoes are golden brown.
