You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make these garlic Parmesan roasted potatoes.
- Potatoes - I recommend going for Russet potatoes or Yukon gold potatoes.
- Extra virgin olive oil - a good quality olive oil is really a must in my kitchen!
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Parmesan cheese - I recommend buying a block of cheese and grating it yourself at the last moment, it's so much better!
🌶Variations
Feel free to change these crispy Parmesan potatoes to go with your tastes. I suggest several options:
- Vegetarian - use a Parmesan cheese that doesn't contain animal rennet!
- Spice it up with some red pepper flakes or a pinch of Cayenne pepper.

- Cut your potatoes in half lengthwise, then in half or quarters widthwise, depending on their size.
- Cook for 10 minutes in a pan of boiling water, then dry well with a clean kitchen towel and place them in a large bowl.
- In a bowl, mix the olive oil, garlic, Parmesan cheese, onion powder, paprika, oregano, and black pepper.
- Preheat your oven to 410°F/210°C on natural convection/static heat high and low.
- Add the Parmesan mixture to the potatoes and mix well.
- Put potatoes on a large baking sheet lined with parchment paper. Bake for 35 minutes or until golden brown, turning halfway through.
- Using a silicone brush, brush with a mixture of melted butter, chopped parsley and sea salt.

- No need to peel your potatoes if they are organic - the skin is not only tasty and nutritious, but also crispy.
- Double cooking is crucial - it's what makes the potatoes so melt-in-the-mouth on the inside and crispy on the outside. The potatoes are first boiled, then baked in Air Fryer.
- Make one single layer for best results - if the potatoes overlap, they might not cook the right way and and they won't be as crispy as they could be!
- Adapt the cooking time according to the size of your potatoes.
