You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this delicious pasta dish.
- Parmesan cheese - I really recommend buying it in block and grate it yourself at the last moment, it's soooo much better!
- Dry white wine - Sauvignon blanc, Chardonnay, Pinot Grigio, Chablis, etc...
- Pasta - I used Penne pasta but you can use any pasta you like (Fettuccine, Spaghetti, Linguine, Mafaldine, etc...)
- Chicken - choose skinless chicken breast s, as it's easier to prepare.
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
🌶Variations
Feel free to change this recipe to go with your tastes. I suggest several options:
- Gluten-free - use gluten-free pasta and make sure none of your spice contains gluten.
- Proteins - you could replace the chicken with meatballs or ground beef.
- More veggies - the best veggie to go with this dish would be the red bell pepper!
- Spice it up - add some chili flakes just before serving.
- Twist it - replace the Cayenne pepper with some Cajun seasoning.

✨How to make this creamy chicken pasta?

- In a small bowl, combine paprika and Cayenne pepper and mix.
- Pour spice mix over chicken breasts and massage well with your hands.
- Place 1 teaspoon olive oil in a large skillet and heat it over medium-high heat.
- When hot, add chicken breasts and cook 3-4 minutes on both sides.
- Place cooked chicken in an aluminum foil and close it tightly with your hands.
- Set aside until the end of the recipe.
- Prepare pasta sauce - place 1 teaspoon olive oil in the skillet and sauté garlic and onion for a few minutes, stirring often so it doesn't stick, until golden.
- Meanwhile, cook pasta in a large pot of water following the package directions for al dente pasta.
- Deglaze the skillet of garlic and onion with white wine.
- Then add heavy cream, tomato paste, sun-dried tomatoes, oregano and chicken broth.
- Stir then add freshly grated Parmesan cheese, butter and stir again to combine everything.
- Add cooked pasta and stir.
- On a clean cutting board, slice chicken breasts and add them to the pan of sauce.
- Season with salt and black pepper, sprinkle with fresh basil and enjoy 🙂

- Cook the pasta al dente - the pasta will finish cooking while in the pan, so don't overcook them or you might end up with a mishmash haha.
- For best results, adapt the amount of Cayenne pepper according to your tastes and your love of spicy
- For the most tender and juicy chicken, place your chicken breasts in aluminium foil just after you've cooked it. This tip changed my cooking life!
- If you want to be 100% sure your chicken breasts are food-safe, you can insert a meat thermometer into them: if the internal temperature is below 330°F/165°C (according to the US Department of Agriculture), leave them to cook for a few more minutes.
- Whisk very well after you add the Parmesan cheese to the sauce, so it melts perfectly in it.

- Store - let the dish completely cool then store it in an airtight container in the refrigerator for up to 3 days.
- Reheat - place leftovers in a microwave safe dish and heat until pipping hot.
- Freezing - put it in a freezer bag, labelled with the name and the date of the recipe and place it in the freezer.
- Defrosting - line a baking sheet with some parchment paper, place the portion you want to eat on it and bake in a preheated oven (320°F/160°C) for 10-15 minutes or until pipping hot.
