For lazy or busy weeknights meal, this spicy chicken pasta is just a dream come true! It combines pasta with a super creamy sauce and some juicy, tender chicken... Make this tasty dish your family‘s new favorite dinner!
In a small bowl, combine paprika and Cayenne pepper and mix.
Pour spice mix over chicken breasts and massage well with your hands.
Place 1 teaspoon olive oil in a large skillet and heat it over medium-high heat. When hot, add chicken breasts and cook 3-4 minutes on both sides.
Place cooked chicken in an aluminum foil and close it tightly with your hands. Set aside until the end of the recipe.
Prepare pasta sauce - place 1 teaspoon olive oil in the skillet and sauté garlic and onion for a few minutes, stirring often so it doesn't stick, until golden. Meanwhile, cook pasta in a large pot of water following the package directions for al dente pasta.
Deglaze garlic and onion with white wine then add heavy cream, tomato paste, sun-dried tomatoes, oregano and chicken broth.
Stir then add freshly grated Parmesan cheese, butter and stir again to combine everything.
Add cooked pasta and stir. On a clean cutting board, slice chicken breasts and add them to the pan of sauce. Season with salt and black pepper, sprinkle with fresh basil and enjoy :)
Notes
Store - let the dish completely cool then store it in an airtight container in the refrigerator for up to 3 days.
Reheat - place leftovers in a microwave safe dish and heat until pipping hot.
Freezing - put it in a freezer bag, labelled with the name and the date of the recipe and place it in the freezer.
Defrosting - line a baking sheet with some parchment paper, place the portion you want to eat on it and bake in a preheated oven (320°F/160°C) for 10-15 minutes or until pipping hot.
