These Boom Boom shrimp are tender fried shrimp covered in crispy tempura batter, with a delicious spicy mayonnaise sauce. It's such a comforting meal, easy to make for lazy weeknight meals, and ready in just 15 minutes!

You'll need the following ingredients to make these tasty boom boom shrimp. You can find the quantities in the recipe card below.
- Shrimps - I strongly suggest that you use raw shrimp, deveined and peeled. As it's the main ingredient, use good quality shrimp.
- All-purpose flour + cornstarch to coat the shrimps.
- Garlic powder - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Baking powder - as a leavening agent, baking powder will help to lighten the tempura batter.
- Sparkling water - trust me, the tempura batter will also be much lighter thanks to sparkling water. It's a must!
- Vegetable oil - you can use canola oil, peanut oil or any other neutral frying oil.
- Mayonnaise - you can use store-bought or make it yourself, it's so quick and easy.
- Thai sweet chili sauce - that you can find in most supermarkets.
- Sriracha sauce - this red spicy sauce is a classic sauce in the Asian cuisine.
- Ketchup - homemade or store-bought, your choice!
I just forgot to add salt and black pepper to the photo, but those two ingredients are in the recipe.

If you want to make this recipe gluten-free - only use cornstarch to coat the shrimps, as it doesn't contain gluten.

✨How to make the best Boom Boom shrimp?

- In a non-stick saucepan, pour vegetable oil and heat over medium-high (I strongly suggest that you use a cooking thermometer).
- Prepare the Boom Boom sauce by combining all the ingredients in a mixing bowl.
- In another bowl, mix all-purpose flour, cornstarch, baking powder, garlic powder, salt and black pepper.
- Once the oil has reached the right temperature, add sparkling water to the flour mix.
- Soak shrimps in this batter.
- And put them in hot oil for 3 minutes, until golden.
- Serve cooked shrimps with Boom Boom sauce and enjoy!
👩🏻🍳 Chef's tips
- I really suggest that you use a cooking thermometer so you can completely control oil's temperature. If too hot, you can burn your shrimps and if not hot enough, you won't have crispy shrimp.
- Don't put too many shrimps into the saucepan at once, as this may cause the temperature of the frying oil to drop too low.
💡Frequently Asked Questions
It's a spicy mayonnaise with a light tomato flavor added by Ketchup.
Don't worry, you can completely adjust the spiciness of the sauce by adding more or less sriracha sauce to suit your tastes.
Serve it with your favorite dipping sauce. I personally love tartar sauce, yum yum sauce or homemade Tzatziki. Don't hesitate to add a bit of lemon juice if you like too. And to accompany it, I love to go for sweet potato fries or Basmati rice.
They're quite the same. You'll find mayonnaise and Thai sweet chili sauce in both, but the only difference is that there's no ketchup in Bang Bang sauce.
Don't pour your frying oil down the drain, as it might clog it up. The best thing to do is to put it back in the bottle once it's cooled down (very important, otherwise it'll have holes in it), then take it to a waste disposal site that takes care of dangerous waste or special household waste. And if that's impossible, at least put it in the non-recyclable waste garbage can.
❄️ Storage
Store - once the shrimps are perfectly cold, put them in an airtight container in the refrigerator. They will last for 3 to 4 days. And you can store the Boom Boom sauce in an other airtight container for up to 5 days.
Reheat - I recommend reheating in the oven at 320°F/160°C for a few minutes. This way, shrimp will regain some of their crispiness.
I've seen other food bloggers recommend to freeze them, but I wouldn't advise it: the shrimps will be all soggy and squishy when you defrost them!

Ingredients

- ½ cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup sparkling water
- 1 pound raw shrimps , peeled and deveined
Boom boom sauce
- ½ cup mayonnaise
- 1 tablespoon sweet chili sauce
- 1 teaspoon sriracha sauce
- 1 tablespoon ketchup
Instructions
- In a saucepan, pour vegetable oil and heat over medium-high to 330°F/165°C. I strongly suggest that you use a thermometer.
- Prepare the Boom Boom sauce by combining all the ingredients in a mixing bowl. Taste and if you like it spicier, add 1 teaspoon of sriracha sauce.
- In another bowl, mix all-purpose flour, cornstarch, baking powder, garlic powder, salt and black pepper.
- Once the oil has reached the right temperature, add sparkling water to the flour mix.
- Soak shrimps in this batter with your fingers and put them (only put a few in your saucepan, to avoid lowering the oil temperature) in hot oil for 2-3 minutes, until golden. Repeat until all shrimp have been used up.
- Serve cooked shrimps with Boom Boom sauce and enjoy!
