🧀 Ingredients
You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this blackened chicken Alfredo recipe.
- Fresh Parmesan cheese - I really recommend avoiding pre-shredded cheese, that's much less flavorful. Buy an entire block of Parmesan cheese in your grocery store and grate it yourself at the last moment, you'll see, it's soooo much better! No comparison possible...
- Unsalted butter for the sauce.
- Pasta - I use Fettuccine pasta, because it pairs really well with Alfredo sauce, but Linguine, Spaghetti, Mafaldine, Tagliatelle, etc...could work just fine! Just make sure to use long, flat pasta, which hold the sauce better.
- Fresh garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.

Feel free to change this easy dinner recipe to go with your tastes. I suggest several options:
- Proteins - replace chicken with ground beef, steak or with meatballs (chicken or beef).
- More veggies - sun-dried tomatoes or broccoli would go really well with the rest of the recipe.
- For a spicy flavor, replace Blackening seasoning with Creole seasoning (or Cajun seasoning for a Cajun twist).

✨How to make these chicken Alfredo pasta?

- Put the Blackening seasoning on each side of the chicken breasts, massaging well with your hands.
- Then place the olive oil in a frying pan over medium-high heat, add the seasoned chicken breasts and cook on for 4-5 minutes both sides.
- Once cooked, place them in aluminum foil, seal and set aside until the recipe is finished.
- Cook the pasta in a pot of boiling water, following the package instructions.
- Prepare the creamy sauce: melt the butter in a frying pan, then add the heavy cream and freshly grated Parmesan. Mix well, leave to infuse for two minutes, then add the cooked pasta.
- Serve the pasta on plates, slice the cooked chicken breasts, place them on top of the pasta, sprinkle with fresh parsley or basil and enjoy!

- If you want to be 100% sure your chicken breasts are food-safe, you can insert a meat thermometer into them: if the internal temperature is below 330°F/165°C (according to the US Department of Agriculture), leave them to cook for a few more minutes.
- Whisk very well after you add the Parmesan cheese, so it melts perfectly in the sauce.

- 1 ½ teaspoons onion powder
- 1 ½ teaspoons garlic powder

- ¼ teaspoon cayenne pepper
- 1 teaspoon ground black pepper
- ½ teaspoon salt

- Store - let the dish completely cool then store it in an airtight container in the refrigerator for up to 3 days.
- Reheat - place leftovers in a microwave safe dish and heat until pipping hot.
- Freezing - put it in a freezer bag, labelled with the name and the date of the recipe and place it in the freezer.
- Defrosting - line a baking sheet with some parchment paper, place the portion you want to eat on it and bake in a preheated oven (320°F/160°C) for 10-15 minutes or until pipping hot.
