    Thai soup with delicious ingredients

    Shrimp, red curry paste, coconut milk, tomato sauce and spices: this sauce will delight you as much as it will warm you up!

    Making soup for several days

    By preparing this soup, you can have enough for 4 days for 1 person. Or you can easily prepare it for a dinner party for 4.

    Storage

    Store this soup in the refrigerator, in a bowl covered with a plate, aluminum foil or bee-wrap. You can eat it for 3 or 4 days after you've made it!

    Thai coconut shrimp soup

    A gourmet Thai soup that will warm and comfort you in equal measure!

    Cook Time 5 minutes mins
    Total Time 15 minutes mins

    Ingredients

    • 1 garlic clove
    • olive oil used as needed
    • 2 ⅛ cups coconut milk
    • 1 ½ cups tomato sauce
    • 3 ⅓ cups vegetable broth
    • 3 tablespoons red curry paste
    • ½ lime
    • 2 tablespoons ground ginger
    • 1 ⅓ cup shrimp peeled and cooked
    • ½ onion chopped
    • Fresh cilantro
    • Fresh parsley
    Metric - US Customary

    Instructions

    • In a saucepan, sauté the finely minced garlic clove with a drizzle of olive oil until golden. Add the coconut milk, tomato sauce, stock, curry paste, lime juice and ginger.
    • Leave to melt over a low heat for 5 minutes, then add the prawns. Meanwhile, fry the finely sliced onion in a hot pan with a drizzle of olive oil.
    • Finally, remove from heat and pour into bowls. Add the cilantro, parsley, lime strips and caramelized onions as soon as they are cooked. Enjoy!
