    • Honey: I use flower honey from France, a blend of many varieties of flowers. There are so many varieties of honey, you're spoilt for choice!
    • Pistachios: I prefer to buy shelled pistachios so that I don't have to remove the shells one by one.

    Strawberry avocado toast

    A summer toast that mixes sweet and savory, with lemony avocado purée and delicious strawberries.

    Ingredients

    • 2 large bread slices of your choice
    • 1 avocado
    • ½ lime
    • 1 tablespoon olive oil
    • ½ cup strawberries sliced
    • ⅛ cup feta cheese crumbled
    • 1 handful flax seeds
    • 1 tablespoon honey
    • 1 handful pistachios

    Instructions

    • Toast your bread slices in a toaster (or frying pan with a bit of butter, if you don't have one).
    • In a bowl, mash your avocado with a fork, and add the lime juice and olive oil.
    • Spread the avocado mixture on the bread, wash the strawberries, cut them in half and place them on top.
    • Then add a few flax seeds, a drizzle of honey and some pistachios that you've crushed in a mortar (improvise if you don't have one: you can put them in a towel, for example, and tap them with a rolling pin).

    Notes

    Warning: the buttercups in these photos are not edible and are poisonous. I realized this after I'd taken the photos and removed them from the toast!
