Spinach and cheese börek: if you're not familiar with this Turkish specialty, I really recommend you try it. They're simply crispy sheets stuffed with cheese, spinach and onion compote.
Made with yufka leaves, borek are ultra-melting on the inside and extremely crispy on the outside: a pure delight!

Turkish spinach and cheese Borek
Ingredients
- 2 medium onions
- 1 cup Turkish cheese
- ¼ cup fresh parsley
- 1.1 lb spinach leaves
- 2 tablespoons ground cumin
- 2 tablespoons ground paprika
- ¼ cup milk
- 1 egg yolk
- Black pepper to taste
- Salt to taste
- 4 yufka Turkish pastry sheets or phyllo dough/pastry sheets
- 1 drizzle olive oil
- 1 drizzle neutral oil
Instructions
- Finely chop the onions and sauté in a hot pan with a drizzle of olive oil. Add the pepper, cumin, paprika and salt.
- Cut off the spinach tips, add them to the pan and cover. Cook over medium heat for 4-5 minutes, stirring occasionally.
- Remove the lid and cook over high heat, allowing the water to evaporate. Stir often to prevent sticking.
- Meanwhile, in a bowl, mix the cheese and chopped parsley. Once the spinach is cooked, add it and mix again.
- Preheat your oven to 355°F/180°C on natural convection/static heat high and low. Lay two yufka sheets on top of each other, spread with neutral oil and add the filling. Roll the whole thing up and cut off the ends (watch the video in the article if this seems unclear).
- Place them on an oven tray lined with parchment paper and brush with a little neutral oil, followed by the mixture of milk and beaten egg.
- Bake for 20 minutes and enjoy!
