    Mushroom tart

    This easy mushroom tart is one of my comforting classics. Generous, fragrant with autumnal flavors and topped with Comté cheese and goat cheese for even more indulgence, you'll be hooked in no time!

    If you like mushrooms, you'll love these dreamy chicken with cream of mushroom, these stuffed mushrooms with pesto and goat cheese or these pasta with Gorgonzola cream and mushrooms.

    🧀 Ingredients

    These are the main ingredients, and the quantities can be found in the recipe card below.

    • Puff pastry: I buy it in the shops.
    • Mushrooms: I use button mushrooms, which are the most economical. But there's nothing to stop you replacing them with girolles, cèpes, trompettes de la mort, etc... Use fresh mushrooms though, they're much tastier!
    • Milk and eggs: for the pie crust.
    • Cheeses: Comté, which I take in blocks and grate myself into strips (it's much better) and goat cheese.
    • Garlic and onion
    • Aromatic herbs: thyme and chives. I recommend using fresh or frozen for this recipe, but not dried.

    ✅ Gluten-free version

    To make this recipe gluten-free, buy gluten-free puff pastry and check that the cheeses do not contain gluten.

    🥰 The chef's advice

    If the edges of your pastry fall back when baking, I've got the solution! After following the recipe instructions (flour the mold, press the edges of the dough, quilt them and make holes with a fork), place in the freezer for 20-30 minutes.

    ❄️Storage

    You can store it for up to 4 days in an airtight container in the fridge, but believe me, not a crumb will be left.

    To reheat, avoid the microwave, which will soften it. Prefer a short oven run.

    Mushroom tart

    This easy mushroom tart is one of my comforting classics. Generous, fragrant with autumnal flavors and topped with Comté cheese and goat cheese for even more indulgence, you'll be hooked in no time!

    Ingredients

    • 1 puff pastry
    • 14 oz fresh button mushrooms
    • ¾ cup milk
    • 2 large eggs
    • 1 ¾ oz Comté cheese
    • 1 tablespoon olive oil
    • 2 garlic cloves
    • ½ large onion
    • 1 teaspoon thyme
    • 1 ¾ oz goat cheese
    • ¼ lemon
    • Salt to taste
    • Black pepper to taste
    • 3 sprigs fresh chives
    Metric - US Customary

    Instructions

    • Preheat your oven to 390°F/200°C in natural convection/static heat mode, top and bottom. Lightly flour your tart tin evenly, place the pastry in it, then press lightly with your fingers on the edges and chisel them with a knife.
    • Using a fork, poke a few holes in the pastry. Place in the oven for 12-13 minutes, until golden brown.
    • Meanwhile, fry the garlic and onion in a pan with a drizzle of olive oil until translucent, then set aside.
    • Wash and slice the mushrooms and sauté in the pan over high heat with a drizzle of olive oil for around ten minutes, until they have rendered all their water.
    • Mix the eggs and milk in a bowl and set aside.
    • Place the mushrooms, garlic, onion, Comté cheese slices, crumbled goat's cheese, milk-egg mixture, salt, pepper and thyme on the tart base. Bake in a hot oven for around 25 minutes.
    • Sprinkle with a few sprigs of chives and enjoy!
