    🍗 Ingredients

    You'll need the following ingredients to make these delicious mozzarella stuffed chicken meatballs. You can find the quantities in the recipe card below.

    • Chicken: I recommend chicken fillets, breasts or cutlets.
    • Eggs - ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.
    • Breadcrumbs, to give texture to the chicken meatballs.
    • Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
    • Onions: I recommend white or yellow.
    • Mozzarella for the melting heart of the dumplings.
    • Flour: this is crucial, as it gives the dumplings a fluffy texture, holds together better during cooking and ensures a golden crust.
    • For flavor: herbs (tarragon, basil, chives, parsley, thyme and oregano), spices (piment d'Espelette, cumin and paprika) and lemon.

    🧅 Variations

    Feel free to modify this recipe to suit your tastes. I suggest several options:

    • Japanese style: mix ground chicken with onion and ginger. Pan-fry them on skewers in Yakitori sauce (homemade or store-bought).
    • Italian style: mix ground chicken with onion, Parmesan cheese (which replaces breadcrumbs), a little tomato paste and basil.
    • Indian style: make dumplings with ground chicken, onion, curry powder, turmeric and coriander.
    • With sauce: if you'd like to add a sauce to accompany your meatballs, a tomato sauce, creamy mushroom sauce or homemade barbecue sauce would be perfect. This sauce with cream, Parmesan and roasted cherry tomatoes would also be incredible!
    • As a garnish: you can put them in a sandwich or burger (by flattening them).

    Can I make them in advance?

    Yes, of course, as they can be kept for 2 to 3 days in the fridge.

    Can I use turkey instead of chicken?

    Yes, you can. You'll need to prepare it in the same way as the chicken in the recipe.

    Why are my chicken meatballs hard?

    This means you've overcooked them.

    Can I change the cooking method?

    Yes, you can also make them in the oven: put them in a preheated oven at 390°F/200°C for about 20 minutes.

    What to serve these chicken meatballs with?

    A vegetable salad, like my Greek salad, fries (potato or vegetable fries, like these zucchini fries), zucchini tagliatelle, potatoes (these Hasselback potatoes are perfect), pasta or a bowl of rice.

    ❄️ Storage / freezing

    Storage: once cold, place in an airtight Tupperware-style container in the fridge. This will keep them fresh for 2-3 days.

    Reheat: reheat for a few minutes in the oven at 160°C or in the microwave.

    Freeze: you can of course freeze these dumplings! Simply place them in a freezer bag, making sure to write the date and name of the recipe on the bag beforehand. To defrost, pop them in the microwave.

    Mozzarella stuffed chicken meatballs

    Ingredients

    • 1 lb ground chicken
    • 1 large egg
    • 1 tablespoon tarragon chopped
    • 2 tablespoons basil chopped
    • 2 tablespoons chives chopped
    • 3 tablespoons parsley chopped
    • 1 tablespoon thyme chopped
    • 2 tablespoons oregano chopped
    • ½ teaspoon salt or to taste
    • ½ teaspoon black pepper or to taste
    • 1 pinch Espelette pepper
    • 1 tablespoon paprika
    • 1 tablespoon cumin
    • 5 tablespoons breadcrumbs
    • ¼ lemon
    • 2 large garlic cloves minced
    • ½ onion minced
    • 1.76 oz mozzarella cheese
    • all-purpose flour
    • 5.07 floz olive oil

    Instructions

    • Mix ground chicken with the egg, chopped herbs, salt, pepper, Espelette pepper, paprika, cumin, breadcrumbs, lemon juice, garlic and onion.
    • Using your hands, form balls, flatten them and add a little mozzarella inside. Re-form into balls and dip in flour.
    • Heat some olive oil in a frying pan over medium heat and cook the meatballs on both sides until golden brown. Leave to cook covered for a few minutes and enjoy!
