These are the main ingredients, and the quantities can be found in the recipe card below.
- Chicken: fillets or cutlets.
- Herbs: thyme, oregano, parsley and basil. Fresh, frozen or dried, make do with what you have on hand!
- Lemons: prefer organic lemons, as this recipe uses both the juice and the zest. If the lemon peel is full of pesticides, it's bad for your health!
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Onion: I use powdered onion here, which blends better with the chicken pieces than fresh onion.
- Original Dijon mustard, to lightly flavor and spice up these chicken brochettes.
- A pinch of ginger: I prefer powdered ginger, which blends better with the chicken pieces than fresh ginger.

Grilled chicken skewers
Ingredients
- 2 cups chicken fillets
- 3 tablespoons thyme
- 2 tablespoons oregano
- 1 tablespoon parsley
- 2 tablespoons basil
- 1 lemon
- 2 large garlic cloves
- 1 tablespoon onion powder
- fine salt to taste
- black pepper to taste
- 1 teaspoon olive oil
- 2 teaspoons mustard
- 1 teaspoon ginger
Instructions
- Cut the chicken fillets into large pieces. Place in a bowl and add thyme, oregano, parsley, basil, lemon zest, lemon juice, garlic, onion powder, olive oil, mustard and ginger.
- Season with salt and pepper and refrigerate for at least 2 hours. The longer (maximum 24 hours) you leave the chicken to marinate, the better impregnated it will be.
- Place chicken pieces on skewers. In a hot frying pan over medium heat, add a drizzle of olive oil and your skewers. Brown the first side for a few minutes, then turn over and cover to cook the second. Sprinkle with fresh parsley and basil, and enjoy!
