These are the main ingredients, and the quantities can be found in the recipe card below.
- Parsley: flat. It has to be fresh.
- A lemon: take it organic, as you'll be using it for its zest, so it mustn't have undergone any chemical treatment beforehand.

🥰 Chef's tips
- Use a knife to cut the ingredients. It's tempting to use a blender or mixer, but that would be a waste: the aim is to really feel the flavors of each ingredient, and you risk ending up with a purée using anything other than a knife.
- Lemon is the only fruit used in Gremolata, and certainly not orange, as you can see. In fact, it's no coincidence that you don't see many of them in traditional Italian cuisine: oranges aren't local, didn't take well to transport and didn't keep well either.
💡 Frequently Asked Questions
Gremolata is traditionally used in Osso Buco, once cooked. You can also enjoy it with pasta, risotto or Roman semolina gnocchi. Or with white meat, fish or summer vegetables (tomatoes, eggplants, zucchinis, peppers, etc.). If you add olive oil, it makes a sauce, and if you add olive oil plus vinegar, it can also make a nice vinaigrette!

Gremolata cannot be preserved: prepare it at the last moment to make the most of its freshness and fragrance.
Don't freeze Gremolata: it will lose all its flavor.

Authentic Italian Gremolata (parsley condiment)
Ingredients
- 1 ¾ cups fresh parsley including stems
- 2 garlic cloves
- 1 lemon
- 1 small anchovy fillet optional
Instructions
- Remove the hard stems from the parsley, then chop very finely. Try to crush the leaves as little as possible.
- Grate the zest of a lemon, then press or grate the garlic. Mix well and serve as soon as it's ready. In some regions, Italians sometimes add a small fillet of finely sliced anchovy.
