I sometimes go to Greece in the summer, and what a pleasure it is to find gyros, those delicious Greek sandwiches made with pita bread, vegetables and tzatziki. Spices and herbs are added, and it's often served with French fries.
It's an emblematic dish of Greek street-food, and can even be found in some restaurants. Gourmet and hearty, gyros perfumes the streets of Greece with its tantalizing aroma. As soon as you see this colorful sandwich, believe me, you'll succumb to temptation!

Doner kebab, a Turkish specialty, is very similar to gyros. They are differentiated by the meat (there is very rarely pork in a kebab) and by the sauces (a gyros has a tzatziki sauce whereas a kebab uses white sauce, as well as other sauces such as barbecue sauce, samurai sauce, etc.).
It's often pork. I wanted to change things up and suggest lamb, but you could also use chicken.
It is often served with French fries. At home, you can also eat it with rice.

Greek lamb Gyros
Ingredients
- 4 pitas
- 1.9 lb lamb shoulder boneless
- 2 cups Greek yogurt
- 2 tablespoons ground coriander
- 2 tablespoons dried oregano
- 1 large garlic clove
- 1 small lime
- 10 mint leaves
- 10 basil leaves
- 2 tablespoons thyme
- 1 tablespoon olive oil
- 1 yellow bell pepper
- ¾ cup feta cheese
- 1 cucumber
- 1 large tomato
- 1 large tomato
- Salt
- Pepper
Instructions
- Coarsely chop the lamb, if you haven't already done so. Place in a bowl with one quarter of Greek yoghurt, ground cilantro, oregano, minced or pressed garlic, salt and pepper.
- Cover and refrigerate for at least 1h30 (overnight is even better).
- Slice the yellow bell pepper and sauté in a pan with a drizzle of olive oil, salt and pepper over high heat. After 5 minutes, turn down the heat to medium and add the lamb and marinade.
- Cook for 10-15 minutes, stirring frequently. Meanwhile, dice the tomatoes and cucumber and set aside.
- In a bowl, mix the remaining Greek yoghurt with the chopped herbs (mint, basil and thyme), lime juice, salt and pepper. Taste and adjust if necessary.
- You can fill the pitas with the vegetables and meat, or place the whole thing on top. Crumble the feta in or on top, add a few fresh herbs, the yoghurt sauce and enjoy!
