    Garlic herb butter toast with parsley shrimp

    Toasted toast with herb-flavored butter and spicy, marbled shrimp.

    What's more, there's no fancy ingredients, just pleasure. It's gourmet, delicious and perfect for a quick lunch or a lazy dinner.

    • It's adaptable: you can replace the shrimps with other seafood you prefer, replace the feta with another cheese or even remove certain herbs you don't like.

    ✅ Gluten-free version

    Choose gluten-free bread (yes, there is such a thing!) and do the same for semi-salted butter. Normally, most of them are gluten-free.

    Herbs, lemon, feta and vegetable oils such as olive oil are also gluten-free (check the label if you're unsure).

    Cheeses are normally gluten-free, but highly processed dairy products may contain gluten. If you're not sure about feta cheese, you can try fresh goat's cheese, cream cheese. In any case, always check the labels carefully.

    I advise you to eat these toasts fairly quickly, as cooked shrimp don't keep well.

    Garlic herb butter toast with parsley shrimp

    A crispy toast with herb-infused butter and garlic parsley shrimp: pure delight!

    Ingredients

    • 2 slices bread
    • 1 tablespoon basil
    • 2 tablespoons parsley divided
    • 1 teaspoon tarragon
    • 1 teaspoon dill
    • 1 tablespoon chives
    • 3 tablespoons softened semi-salted butter
    • 1 ⅓ cups raw shrimps
    • 3 garlic cloves divided
    • 1 tablespoon olive oil
    • 1 pinch Espelette pepper
    • 1 pinch Cayenne pepper
    • Salt
    • Black pepper
    • ½ lemon
    • ⅛ cup feta cheese

    Instructions

    • Finely chop the basil, half parsley, tarragon, dill, chives, and 1 garlic clove. Mix everything in a bowl with the softened salted butter (you can briefly microwave it if needed, but be careful not to melt it, just soften it).
    • Then, finely chop the remaining parsley and the other 2 garlic cloves. Shell your shrimp, lightly score their backs, and remove the vein.
    • In a skillet with olive oil, place the shrimp and cook for 2 minutes. Then, add the parsley and garlic and cook for a few more minutes. As soon as the shrimp are browned on both sides, remove the skillet from the heat and add the Espelette pepper, a pinch of cayenne pepper, salt, and pepper.
    • Toast your slices of bread (in a toaster or in a pan with butter), spread the herb butter on them, and place the shrimp on top. Add the feta, a little lemon juice, and some zest.
