    French apple tart

    Golden puff pastry topped with melting, caramelized apples and a sweet, gourmet sauce: this thin, crisp apple tart is an easy-to-make snack for comforting autumn and winter afternoons.

    This apple tart is one of my "madeleines de Proust", because my Mom has been baking it for me since I was a little girl. It also became one of my favourite snacks, and hopefully my children's too!

    🧈 Ingredients

    You'll need the following ingredients. You can find the quantities in the recipe card below.

    • Puff pastry: I find it the best for this recipe, but you can use shortcrust instead.
    • Eggs yolks - ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.
    • Butter: use mild butter.
    • Sugar: white.
    • Apples: in season from August to April included.
    Focus on caramelized apples.

    ✅ Gluten-free version

    • To make this recipe gluten-free, buy a gluten-free puff pastry - it exists! The other ingredients do not contain any.

    🥰 Chef's tips

    1. If the edges of your pastry fall back when baking, I've got the solution! After following the recipe instructions (flour the mold, press the edges of the dough, quilt them and make holes with a fork), place it in the freezer for 1h to 1h30.
    2. To know when the tart is cooked: the apples are golden brown and the sauce is solidified and cooked.

    Yes, in winter you can switch them with apples!

    How to make thin apple slices?

    Peel the whole apple. Remove the core with an apple corer and lay the apple down to cut into strips. Then cut in half vertically.

    ❄️ Storage

    To store this tart, you can leave it outside, covered with aluminum foil, or keep it covered in the fridge. It will keep for about 3 to 4 days!

    French apple tart

    Ingredients

    • 1 puff pastry
    • 3 egg yolks
    • 7 tablespoons butter soft
    • ½ cup sugar
    • 4-5 apples peeled, cored, and thinly sliced

    Instructions

    • Preheat your oven to 392°F/200°C on natural convection/static heat high and low. Lightly flour tart tin evenly, place the puff pastry in it, then press lightly with your fingers on the edges and chisel them with a knife.
    • With a fork, poke holes in the pastry so that it doesn't puff up when baked, and once the oven is hot, pre-bake it for 10-12 minutes, until lightly golden.
    • In a bowl, place the melted butter (it must be lukewarm and not boiling, as it might cook eggs), sugar and egg yolks, then set aside.
    • Arrange slices of apple on the pastry and add the mixture on top.
    • Bake in the middle of the oven for 35 to 40 minutes, until the apples are golden-brown and the butter-sugar-egg mixture has set. Enjoy!
