- Potatoes - I recommend going for Yukon Gold potatoes or Russet potatoes. And prefer large potatoes, as it will be easier to shape.
- Parmesan cheese - I really REALLY advise you to buy it in block and to grate it yourself last minute, it's soooo much better!

✨How to make these crunchy accordion potatoes?

I shot this recipe during my Christmas Advent Calendar, that's why there are all those Christmas decorations in the process shots below.
- Peel the potatoes and put them on a clean cutting board.
- Use a sharp knife to cut each potato into 0.6 to 0.8-inch slices thick.
- Then into rectangles.
- Place each rectangle between wooden skewers (or chopsticks), then cut thinly in vertical lines.
- Turn the rectangle over and cut thinly in diagonal lines.
- Preheat your oven to 430°F/220°C in natural convection/static heat mode top and bottom.
- Put the potato rectangles in a pot of boiling water for 8 min, this is what will make them ultra crispy.
- Wipe the potatoes dry with a clean kitchen towel.
- In a large bowl, combine the melted butter and freshly grated Parmesan cheese.
- Add the paprika and Cayenne pepper.
- Then the herbes de Provence.
- And finish with garlic powder, salt and black pepper.
- Place the rectangles on a large baking tray lined with parchment paper (there should only be one single layer, avoid overlapping).
- Using a silicone brush, brush the garlic butter mixture over them and bake in the pre-heated oven for 40 to 50 minutes, until golden brown.
- Sprinkle with flaky sea salt and fresh parsley, and enjoy!

- Dry the potato rectangles well with a clean cloth to remove excess moisture, this is what will make the difference.
- Use a sharp knife to make clean cuts.
- I like my potatoes accordions a bit thick, because it's the best way to have crispy edges and exterior as well as a melt-in-mouth interior. If you make thin slices with your potatoes, it will not be as crispy (because you won't be able to let them a long time in the oven) and as melt-in-mouth as in my recipe.
- Adapt the cooking time - I like accordion potatoes super crispy, but you can cook them for a shorter time if you want.

For a brunch, they are the perfect side for an avocado toast or a salmon bagel. You can also serve them the English way, with bacon and fried eggs.
For a side dish, as I said, they go really well with almost everything: meat, chicken, seafood, veggies!
Fresh herbs (I use parsley but you can use rosemary, thyme or oregano!), ranch dressing, Ketchup of course or my delicious creamy deluxe sauce.

Reheat - avoid the microwave, that will make them completely soggy. Prefer a pre-heated oven (150°C/300°F) for a few minutes.
