    A delicious pasta salad full of flavors and tastes, with tasty summer vegetables, Parma ham and lots of fresh herbs. A real delish, ready in just 15 minutes!

    🥒Notes on ingredients

    You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this delicious salad.

    • Orzo pasta - if you can't find any (I find mine in some supermarkets or in special world cuisine grocery stores), you can use any pasta you like. I personally recommend Penne, Farfalle, Coquillette, Fusili, etc…
    • Zucchinis - in season from June to September included!
    • Cherry tomatoes - in season from June to September included!
    • Cucumbers - in full season from May to October included!
    • Peaches - yellow, white or nectarine, take what you like! In season from June to September included.

    🍆Variations

    Feel free to change this recipe to go with your tastes. I suggest several options:

    • Add fruits - are you a fan of sweet and salty? I've got just what you need: avocado, mango, corn, strawberries (yes, it's amazing, but delicious with salty) or melon.
    • Replace cream cheese - feta, mozzarella, burrata, goat cheese, gorgonzola…
    • Replace Parma ham - hard-boiled eggs, grilled chicken, shrimp, squid, octopus, chickpeas.
    • Add grilled vegetables - eggplants, peppers, preserved lemon, red onion or green beans.
    • Add herbs - mint, dill, parsley, coriander, tarragon… indulge yourself, the more the merrier!
    • Add salad - lamb's lettuce, arugula, spinach shoots…

    This recipe has not been tested using any other substitutions. If you do try substituting ingredients, it may not turn out as it's meant to. Please leave a comment below letting me know if it worked out!

    ✨How to make this delicious pasta salad?

    • Cut your zucchini and cucumber into strips, and peel and halve your peaches and cherry tomatoes. In the same pan, over medium heat with a drizzle of olive oil, fry the peaches for 1 to 2 minutes (we just want to snack on them) and the zucchini for a good ten minutes, stirring often, until caramelized.
    • Meanwhile, cook the pasta in a pot of boiling water, following the instructions of the packaging.
    • In a large bowl, combine the cooked and drained pasta with the cream cheese.

    • Add cucumber slices, cherry tomato halves, zucchini and peaches.

    • Add the Parma ham, salt, pepper and finely chopped herbs. Finish with a drizzle of Balsamic glaze and enjoy!

    ❄️Storage

    Leave to cool completely, then place in an airtight container. You can keep it in the fridge for around 2 days.

    Ingredients

    • 1 peach
    • 9 oz zucchini
    • 9 oz pasta
    • 4 oz cherry tomatoes
    • 4 oz cucumber
    • 5 oz Parma ham
    • 5 oz cream cheese
    • 1 teaspoon balsamic glaze
    • lemon juice to taste
    • salt to taste
    • black pepper to taste
    • chives fresh, to taste
    • basil fresh, to taste

    Instructions

    • Cut your zucchini and cucumber into strips, and peel and halve your peaches and cherry tomatoes.
