You'll need the following ingredients to make these chicken cutlets with mushroom cream. You can find the quantities in the recipe card below.
- Flour - believe me, it makes all the difference. You'll soon understand!
- Chicken - I recommend chicken fillets or cutlets.
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
- Mushrooms - they're in season all year round, so make the most of them!
- White wine - use a dry white wine, such as Chardonnay, Sauvignon, Muscat, Riesling or Pinot Gris.
- Heavy cream - for an ultra-smooth, creamy sauce.

✨How to make the best creamy chicken cutlets?
Recipe details and quantities are in the recipe card below.
- Season your chicken cutlets with salt and pepper, massage to coat, then toss in flour.
- Cook the chicken on both sides until golden brown. Set aside.



- Brown the garlic and finely sliced mushrooms over high heat, stirring frequently.
- Deglaze with white wine and allow to evaporate completely over high heat.
- Add the cream and stir well.



- Transfer the chicken fillets back to the pan.
- Sprinkle with parsley and enjoy!


👩🏻🍳Chef's tip
Allow the white wine to evaporate before adding the cream. Otherwise, you'll end up with a very runny sauce.
❄️Storage
Store - place in an airtight tin in the fridge. They will keep for 2 days.
Reheat - put them in the microwave for a few minutes.

Dreamy chicken with cream of mushroom
Ingredients
- 6 tablespoons all-purpose flour
- 2 large chicken breasts
- ½ teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- 0.8 oz unsalted butter
- 2 garlic cloves pressed
- 14 oz fresh mushrooms finely sliced
- 2 tablespoons white wine
- 10.5 oz creme fraiche
Instructions
- Put the flour in a shallow dish. Season your chicken cutlets with salt and pepper, massage into the flour and toss.
- Heat the butter in a large frying pan over medium heat and cook the chicken on both sides until golden. Set aside on a plate.
- Brown the pressed garlic and finely sliced mushrooms for ten minutes over high heat, stirring often to prevent sticking.
- Deglaze with white wine and leave to evaporate for 5 minutes over high heat. Add the creme fraiche and mix well.
- Return the chicken fillets to the pan, sprinkle with parsley and enjoy!

I made this tonight and really enjoyed it! The flavors were subtle but delicious. And it was quick to make, as promised, which is important when you have a toddler at home!
One note: the recipe card says to use heavy cream for the sauce, but the description says to use creme fraiche. Those are two different ingredients with very different consistencies, so you don’t want to get them mixed up. I assumed heavy cream was a translation error and used creme fraiche.
