    😋 A pretty vegan recipe full of deliciousness

    This juice is vegan: it's a simple blend of fruit and vegetable coconut milk. It's the dragon fruit, more commonly known as pitaya, that gives the juice its pretty pink color.

    • Dragon fruit (Pitaya) is rich in trace elements, fiber, iron, vitamins B and C and antioxidants. According to some studies, it could even act against hypertension, autoimmune diseases, diabetes and heart disease.
    • Passion fruit is packed with antioxidants, dietary fibre, vitamin C and iron.
    • Mango is packed with vitamins, minerals and vitamins B and C. In particular, it boosts the immune system and helps reduce fatigue.
    • Banana: helps reduce fatigue and promotes rapid muscle recovery, thanks to the potassium and magnesium it contains. It is also rich in vitamins B6, minerals, fibre and starch.
    • Coconut milk: packed with vitamins, minerals and trace elements. It's also an excellent alternative to animal milk.

    I therefore recommend that you don 't consume this juice every morning, but rather see it as a pleasure you indulge in from time to time!

    Ingredients

    • 5 tablespoons coconut milk
    • 4 passion fruits
    • 1 mango
    • 1 banana
    • 3-4 fresh mint leaves optional

    Instructions

    • Prepare fruits: cut off the ends of the dragon fruit, then cut it in half lengthways. Carefully remove the skin and cut into cubes. Prepare the mango and recover its flesh, which you will also cut into cubes, and finish by slicing the banana.
    • Place prepared fruits in a blender, then scoop out the passion fruit and add the coconut milk.
    • Blend and add fresh mint as a topping if you like (you can also blend a few leaves with fruits).
