You'll need the following ingredients. You can find the quantities in the recipe card below.
- Cucumbers: they're in season from May to October!
- Burrata: you can replace it with goat cheese or cream cheese if you prefer.
- A tomato: in season from June to October included.

- For the toppings: pine nuts, Espelette pepper and a sprinkling of fresh chives.
✨ Customize my cucumber rolls
You can vary the toppings: I like the one with cream cheese, smoked salmon and avocado too.
Otherwise, be as creative as you like: shrimps, chicken slices, crunchy vegetables (carrots or peppers, for example), aromatic herbs (coriander or mint), etc...
✅ Vegan and dairy-free version
To make this recipe vegan and dairy-free, simply remove the burrata and replace it with the vegan cheese of your choice.

Before garnishing, wipe your cucumber slices with absorbent paper (such as Sopalin).
💡 Frequently Asked Questions
No, not if you use organic cucumbers.
They're best eaten just after preparation, when they're at their freshest and crunchiest. I don't recommend preparing them ahead of time, as the cucumber may become watery and soft.
You can opt for vegetable sticks (carrots, peppers, celery or radishes), to bring a nice variety of flavors and textures.
Seafood for the appetizer can be a nice option too: cooked shrimps, pieces of crab, slices of smoked salmon, etc…
Alternatively, you can simply serve them with a salad as an appetizer.
A dry white wine (Vermentino or Pinot Grigio), a dry rosé (Côtes de Provence) or a sparkling white wine like Prosecco are excellent options!
❄️ Storage
You can place the cucumber rolls in an airtight container box in the fridge. They will keep for about 2 days.
I don't recommend freezing them, as they'll be all floaty and tasteless when defrosted.

Cucumber rolls
Ingredients
- 1 large cucumber
- 1 ¼ cups burrata cheese
- 1 avocado
- 2 small tomatoes
- 1 handful pine nuts
- 1 pinch Espelette pepper
- 3-4 chives
- Salt to taste
- Black pepper to taste
Instructions
- Cut the cucumber in half lengthwise and, using a vegetable peeler, cut into strips. Dice the tomato and slice the avocado.
- Place your cucumber slices on a work surface covered with cling film or aluminum foil. They should stick together well. Crumble the burrata with your hands, then add the diced tomato, avocado slices, pine nuts, Espelette pepper, salt, pepper and chopped chives.
- Roll up and place in the freezer for 15 minutes.
- Cut into rolls and place on a plate. Sprinkle with pine nuts and fresh chives, and enjoy!
