    We're not used to cooking artichokes for aperitifs, but I promise you that once you've tried this artichoke caviar, you'll be making it for every aperitif , because it's so quick and easy to make. Simply blend all the ingredients in a blender and you're ready to go!

    • Artichoke bottoms: I find artichokes a little complicated to prepare, so for a quick and easy aperitif, use frozen or already-cooked artichoke bottoms. Of course, you can also use fresh ones if you prefer, by cooking them first.
    • Olive oil
    • ‍Dujus de citron
    • Paprika: I prefer mild, but you can also use smoked paprika.
    • Fine herbs
    • Grated Parmesan cheese
    • Garlic cloves
    • Salt and pepper

    I advise you to consume this recipe within 24 hours, because after that, artichokes can cause digestive problems. But believe me, this dip will be over long before then, it's so good!

    Easy cold artichoke dip

    A simple, easy artichoke spread that's ready in just 5 minutes!

    Ingredients

    • ½ cup cooked artichoke hearts
    • 5 tablespoons extra virgin olive oil
    • ½ lemon juice
    • 1 pinch sweet paprika
    • 1 pinch herbes de Provence
    • ½ cup grated Parmesan cheese
    • 1 large garlic clove
    • Salt to taste
    • Black pepper to taste

    Instructions

    • If you have already-cooked artichoke, go directly to step 2. Otherwise, cook fresh or frozen artichoke hearts in a pan of boiling water.
    • Cut your cooked artichoke hearts into large cubes, then place them in your blender with the lemon juice, minced/pressed garlic, salt, pepper, herbs, paprika, Parmesan and olive oil.
    • Blend to a smooth, homogenous consistency and serve as an appetizer with toasted bread or blinis.
