😋 A delicious Turkish breakfast
With COVID, we haven't been able to travel much in recent months... What's more, Turkey is a country I've always dreamed of visiting. If this was only a dream before COVID, the pandemic has made it definitively impossible. So if I can't travel for real, I've decided to travel for a short while thanks to what's on my plate!
Served for breakfast in Turkey, Çilbir is a delicious blend of yogurt, poached eggs, butter flavored with paprika and aromatic herbs. Personally, I have a passion for poached eggs: when they're runny and hot, they're divine!
But back to the Çilbir... Personally, I love to accompany it with a cup of tea or a fresh, homemade fruit juice. It's a pure delight and gives me a boost for the day.

✅ A recipe suitable for gluten intolerant/allergic people
First, choose a gluten-free Greek yogurt. Butter doesn't contain any, and neither do olive oil, garlic, cilantro, mint, eggs and lime.
🧈 What ingredients do you need?
Here are the ingredients you'll need to prepare this recipe. Quantities can be found in the recipe card at the end of this article.
- Greek yoghurt: I advise you not to neglect the quality of the yoghurt you choose, since it's the main ingredient in this recipe! Try to find a good, thick Greek yogurt, like Mavrommatis or Delta.
- Butter: I prefer soft butter, but you can use semi-salted butter and reduce the amount of salt.
- Olive oil
- Paprika : I prefer sweet paprika, but you can easily replace it with smoked paprika.
- Garlic: in semolina, or a clove of garlic finely minced/pressed with a garlic press
- Fresh coriander and mint leaves
- Fresh eggs
- A few zests of lime
- Salt, if like me you use soft butter

😇 Storage
I advise you to prepare this recipe at the last minute, because boiled eggs harden when stored and it won't be very tasty...Besides, Çilbir doesn't take long to prepare!
📖 Recette
Çilbir: Turkish-style yoghurt and poached eggs
Ingredients
- ½ cup Greek yogurt
- 1 ounce unsalted butter
- 1 tablespoon olive oil
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- Fresh cilantro leaves
- Fresh mint leaves
- 2 eggs
- lime zest
- 1 pinch salt
Instructions
- Place the Greek yogurt in a bowl or on a plate, and set it aside.
- In a small pan, gently melt the butter over low heat. Then, add a drizzle of olive oil, along with the paprika, salt, and garlic powder. Let it infuse without letting the butter turn brown.
- Meanwhile, heat some water in a saucepan. Once it's boiling, poach your eggs (break them and let them cook in the boiling water for about 2 minutes and 30 seconds).
- Then, place the poached eggs on top of the Greek yogurt, the flavored butter, and the finely chopped coriander and mint. Grate some lime zest over it, and voilà, it's ready to be enjoyed with a nice cup of tea or a refreshing fruit juice on the side!
