You can replace the Reblochon with another cheese or a vegan cheese, the bacon with another meat or the meat substitute of your choice if you're vegetarian/vegan, and remove the spinach if you don't like it.

Gluten-free buckwheat galettes are available on the market. In fact, buckwheat galettes are made...with buckwheat flour, which is gluten-free. But sometimes, manufacturers can add certain cereals that contain gluten. So be sure to check the composition of the ones you buy, to make sure that gluten is excluded (they're usually happy to mention it)!
🥬 Make this recipe vegetarian
To replace the meat in this recipe, simply use seitan, tofu or tempeh instead of bacon. Please note that many cheeses contain animal rennet (a coagulant that transforms milk into cheese by curdling it), and to my knowledge there is no Reblochon that does not. I therefore recommend replacing it with the vegan cheese of your choice.
To find out if the cheese you're buying is vegetarian, look for the words "suitable for vegetarians". You can also look at the list of ingredients: if you see "rennet", it's 99% animal-based.

Buckwheat Galette with cheese and grilled bacon
Ingredients
- 2 buckwheat galettes
- 1 cup bacon strips
- 3 ½ cups baby spinach
- 1 ⅔ cups Reblochon cheese Vacherin Mont d'Or, Beaufort cheese, goat cheese, Brie cheese, Epoisses cheese, Camembert cheese, Gorgonzola, etc...
- A bit of unsalted butter
Instructions
- At medium-high heat, place a small pat of butter in a skillet and add bacon strips, then let them cook for 5 minutes.
- Next, add the baby spinach leaves, reduce the heat to low, cover, and let them cook for another 5 minutes. Reserve the contents of the skillet.
- Reduce the heat to low and place one buckwheat galette in the skillet, add the Reblochon cheese cut into large pieces, and the contents of the skillet. Cover once again and let it cook for 5 minutes.
- Repeat the process with the second galette and enjoy!
