A gourmet way to enjoy beet even when you're not a fan: toasted bread rubbed with garlic, a beet and ricotta cream, a crumbled hard-boiled egg, a little feta cheese and a few fried onions. This toast with beet cream is a pure delight, ready in 15 minutes!

🍞 Ingredients
You'll need the following ingredients to make this delicious toast. You can find the quantities in the recipe card below.
- Bread: of your choice (with or without seeds, cereal, gluten-free, farmhouse, etc.)
- A beet: already cooked to go faster. If you have a fresh one, have a look at the FAQ
- Two cheeses: ricotta and feta, but you can substitute them.
- Eggs: Ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.
- Fried onions: available in most supermarkets
- Garlic: if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
✅ Vegan, dairy-free and gluten-free version
- To make this recipe vegan, replace the ricotta and feta with the vegan cheese (plant-based cheeses) of your choice, and the egg with a plant-based egg substitute (yes, there is such a thing!).
- To make this recipe dairy-free: buy dairy-free feta and replace the ricotta, which is one of the most dairy-rich cheeses, with dairy-free heavy cream.
- To make this recipe gluten-free: buy a gluten-free bread and check that the salt, pepper and fried onions you're using don't contain gluten (they shouldn't).
😍 Chef's tips
- To cook a hard-boiled egg successfully: if the egg is small, leave it in boiling water for 10 minutes with its shell on. If larger, leave for 12 minutes. Once out of the water, place in a bowl of cold water with ice cubes to stop the cooking process, before shelling.
- You can replace it with a soft-boiled egg: let it cook for about 6 minutes in a pan of boiling water with its shell on. Place in a bowl of cold water with ice cubes to stop cooking before shelling.
- Or a poached egg: break it into a pan of boiling water and leave to cook for 3 minutes. You can form a swirl with a knife by twisting around the edges of the pan, to get a nice round shape.

Of course! To cook: place in a pot of boiling water for 30 to 40 minutes, depending on size. Stick a knife into it, and if it sinks in well, it's cooked. All you have to do is peel and use.

❄️ Storage
I recommend topping your slices of bread at the last moment, otherwise it may become too soft. But you can prepare the beet cream 2 days beforehand and store it in an airtight container in the fridge.

Toast with beet cream and hard-boiled egg
Ingredients
- 4 slices bread
- 1 ¼ cup beetroot precooked
- ½ cup ricotta
- ¼ lemon
- 2 eggs
- 1 tablespoon fresh chives
- 2 handfuls fried onions
- ½ cup feta cheese
- 1 small garlic clove
- Salt
- Black pepper
Instructions
- Cut your cooked beet into small cubes and place in your blender (see note 1) with the ricotta, a little lemon juice, salt and pepper.
- Blend to a smooth cream. Taste to make sure it's just right, and adjust (salt, pepper, lemon juice) if necessary.
- Place the eggs with their shells in a pan of boiling water and cook for 10 minutes for small eggs and 12 minutes for larger ones.
- Toast your slices of bread (see note 2), rub the garlic clove over them and spread the beetroot/ricotta cream on top. Shell the eggs, then crumble the hard-boiled egg yolk over them.
- Then crumble the feta, add the fried onions and finely chopped chives, season with salt and pepper if necessary, and enjoy!
Notes
- If you don't have a blender, you can put the ricotta cream ingredients in a bowl and use an immersion blender.
- If you don't have a toaster, you can fry your slices of bread with a knob of butter in a pan until golden brown.
- The amount of ingredients left will depend on the size of your bread slices.
- You can enjoy these toasts with the salad of your choice.
