    This delicious asparagus puff pastry features a crispy puff pastry braid topped with a lemon-herb ricotta cream, tender asparagus, crunchy bacon and melting mozzarella. Fast and easy, believe me: to try it is to love it!

    These are the main ingredients, and the quantities can be found in the recipe card below.

    • Green asparagus: the season is short (April to June included), so make the most of it!
    • Puff pastry: to speed things up, I use store-bought puff pastry.
    • Cheese: I use ricotta and grated mozzarella.
    • Sliced bacon.
    • Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
    • Fresh herbs: dill, mint, basil and parsley.
    • Eggs - ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.

    To make this recipe gluten-free, buy gluten-free puff pastry. Also check that your ricotta doesn't contain any.

    How to make a pretty flaky braid?

    It's very simple: leave a vertical strip in the middle for your filling. Using a knife, make cuts from the bottom to the top of the pastry. Place the filling on top and fold the notched pieces towards the middle of the pastry. Simply brush with egg yolk, add the seeds of your choice and place in the oven.

    ❄️Storage / freezing

    Theoretically, it can be kept in the fridge, but the crispness of the dough may soften. So eat it as soon as it comes out of the oven. But believe me, it's so good it won't last long anyway!

    Asparagus, bacon and mozzarella puff pastry

    It consists in a crispy puff pastry braid, topped with ricotta cream, tender asparagus, crunchy bacon and melting mozzarella.

    Ingredients

    • 3 ¾ cups green asparagus
    • 1 puff pastry
    • 1 ¼ cups grated mozzarella cheese
    • 3.5 oz bacon
    • ½ cup ricotta cheese
    • 1 large garlic clove
    • ¼ lemon
    • 1 tablespoon olive oil
    • 1 teaspoon dill
    • 1 teaspoon mint
    • 2 teaspoons basil
    • 1 teaspoon parsley
    • 1 egg yolk
    • 1 handful sesame seeds
    • fine salt to taste
    • black pepper to taste

    Instructions

    • Cut off the tough asparagus tips and cook for 10 minutes in a pan of boiling water. Once cooked, place in a bowl of cold water to stop the cooking process and brown the bacon slices.
    • Prepare the ricotta cream: in a blender, blend the coarsely chopped herbs, salt, pepper, lemon juice, ricotta, garlic and a drizzle of olive oil.
    • Spread the center of the puff pastry with the ricotta cream, then add the asparagus, bacon and mozzarella.
    • Preheat your oven to 390°F/200°C in natural convection/static heat mode, top and bottom. Make slits in the sides of the puff pastry and fold over one after the other.
    • Brush with egg yolk and sesame seeds, then bake for 25 minutes. Enjoy piping hot!
