For an aperitif with friends or as an appetizer for a gourmet dinner, this recipe takes just 15 minutes to prepare and is perfect for any occasion! Both soft and crunchy, I don't know anyone who can resist them... So give them a try!

Camembert and eggs are gluten-free.
But be sure to buy gluten-free flour and breadcrumbs, which are easy to find on the internet.
🧀 What ingredients do you need?
Here are the ingredients you'll need to make these waffles. Quantities can be found in the recipe card at the end of this article.
- A Camembert: choose the brand you like
- Eggs
- Flour: T45 all-purpose flour will do very nicely.
- Breadcrumbs: since I discovered Panko breadcrumbs, a Japanese breadcrumb, I can't do without them and I use them everywhere! So that's the one I recommend, but if you don't have any, normal breadcrumbs will work just as well.
- Optional: you can sprinkle these meatballs with a little Parmesan cheese, if you really like cheese.
📝 Note to vegetarians
Many cheeses contain animal rennet (a coagulant that transforms milk into cheese by curdling it). There are Camembert cheeses without animal rennet, you just have to look carefully at the product.
To be sure the cheese you buy is vegetarian, look for the words "suitable for vegetarians". You can also look at the list of ingredients: if you see "rennet", it's 99% animal-based. On the other hand, if you see "microbial coagulant", "microbial enzymes" or "vegetable rennet", the product is vegetarian. There's also a "V-label" (a green V on a yellow background) indicating that the product is vegetarian or vegan. If you see an "IGP", "AOP" or "Label Rouge" label, animal rennet is automatically used in the product in question.

Ideally pasture-raised organic. You can refer to the Eco Tips I've written on eggs to help you choose the right ones.
⚠️ Pay attention to frying oil temperature
If you set it too high, the chicken will burn (and so will the frying). You need to heat it over medium heat (around 340°F to 355°F/ 170 to 180°C if you have a kitchen thermometer). However, to check if it's hot enough, you can drop a drop of water in it: if it sizzles, you can use it right away.
🧐 What to do with your used frying oil?
A word of advice: don't pour your frying oil (sunflower oil in this case) down the sink, otherwise it will clog up. The best thing to do is to put it back in the bottle once it's cooled down (very important, otherwise it'll leak and your funnel will melt, as it did for me the first time), then take it to a waste disposal site with hazardous waste or special household waste. And if that's impossible, at least put it in the non-recyclable waste garbage can.
😇 Storage
If your guests (or you, for that matter!) don't devour these little Camemberts in one sitting, you can leave them in the fridge for around 24 hours.
To reheat them, just pop them in the oven and you're done! Don't microwave these delicious little croquettes, they will be all soft and soggy.

Fried camembert
Ingredients
- 1 cup Camembert cheese
- 2 eggs
- 1 cup all-purpose flour
- 2 cups Panko breadcrumbs
Instructions
- Start by heating your frying oil, which may take a little while. Then cut your Camembert into 8 more or less equal pieces, and dip them into a plate with beaten eggs, another with flour, again in eggs, and finally in breadcrumbs.
- Once the frying oil is hot (approx. 375°F/190°C), dip the Camemberts into it and cook for about 1 minute. Enjoy as an appetizer or starter!
