In making this recipe, I realized that it wasn't actually tzatziki that I didn't like...but industrial tzatziki!
Personally, I'm not a fan of cucumber, yet in tzatziki it's delicious, refreshing and ideal for an aperitif (because it's super-fast, of course).

15-minute easy Greek Tzatziki sauce
Ingredients
- 2 ½ cups cucumber chopped
- 3 tablespoons Greek yogurt
- ½ lemon
- 1 garlic clove
- 3-4 mint leaves
- A few sprigs dill
- Salt to taste
- Black pepper to taste
Instructions
- Grate the cucumber, then place in a clean cloth and wring out well: it's very important for the texture that there's no water left at all, or as little as possible.
- Place the wrung-out cucumber in a bowl and add the Greek yoghurt, lemon juice, salt, pepper and pressed (or finely chopped) garlic clove. Finely chop the dill and mint, then add them and mix.
- Taste, adjust seasoning if necessary, drizzle with olive oil and garnish with dill sprigs...and enjoy!
