    3-cheese Grilled Cheese

    A hot sandwich made with buttered bread, rubbed with garlic and pan-roasted. Topped with three melting cheeses,caramelized onions and tomato, this version of the American-style croque-monsieur is delicious, comforting and ultra-quick to prepare.

    🧀 Ingredients

    Here are the main ingredients, with quantities given in the recipe card below.

    • Bread: your choice (wholemeal, gluten-free, cereal, country, etc.), but choose a quality bread, as it is the basic ingredient of the recipe.
    • Gorgonzola, old mimolette and cheddar: for the last two, I really recommend block cheeses for two reasons: the taste is much better and they melt much better than those already grated or sliced. You can also have fun and vary the cheeses (emmental, mozzarella, parmesan, burrata, gouda, brie, etc.).
    • Onion and garlic
    • A tomato: in winter, you can replace it with strips of dried tomato.
    • Butter
    • Salt and pepper

    ✅ Vegan and dairy-free version

    • To make this recipe vegan: check that your bread contains no ingredients of animal origin and replace the three cheeses with the vegan cheeses you like.
    • To make this recipe dairy-free: Gorgonzola cheese contains no lactose, since it undergoes triple fermentation. Old mimolette and cheddar cheeses contain very little, so they can be tolerated by lactose-intolerant people (be careful if you're allergic to lactose, it's a different story).

    🥰 Chef's Tips

    • Generously butter the bread so that it browns well in the pan. Once cooked, you can use paper towels to remove the excess.
    • Grilled cheese is always cooked in a frying pan, but don't forget to cover the last three minutes of cooking to ensure that the cheeses melt.

    Can I replace the cheeses?

    Of course! You can have fun and vary the cheeses (emmental, mozzarella, parmesan, burrata, gouda, brie, etc.).

    When to eat tomatoes

    June to September inclusive. If you want to make this recipe outside these months, simply replace the fresh tomatoes with dried ones!

    ❄️ Conservation

    I advise you to make it at the last moment and eat it as soon as it comes out of the pan. If this isn't possible, put it in an airtight box in the fridge for up to 2 days, but it may soften a little.

    To reheat the bread and make it less soft, put it in the oven for a few minutes, but not in the microwave!

    3-cheese Grilled Cheese

    Toasted bread, three melting cheeses, caramelized onions and tomato: this Grilled Cheese is as comforting as it is quick.

    Ingredients

    • 4 slices bread of your choice
    • 1.5 oz Gorgonzola cheese
    • ½ onion
    • 1 tablespoon olive oil
    • ½ tomato
    • ½ cup cheddar cheese
    • ½ cup mozzarella cheese
    • ½ garlic clove
    • Butter
    • Salt
    • Pepper

    Instructions

    • Fry the onion in a pan with the olive oil until nicely caramelized, then set aside.
    • Take your slices of bread and butter them. Place them, buttered side down, in a frying pan over medium heat. Let them brown, then put the slices golden side down.
    • Grate your cheeses, rub the warm bread with a garlic clove and top with the onions, grated cheeses and sliced tomatoes.
    • Season with salt and pepper, close the Grilled Cheese, butter the other side of the bread and place it in the frying pan over medium heat.
    • Once the bread is golden brown, cover with a lid and leave to cook over a low heat for a few minutes to allow the cheeses to melt. Enjoy!
