🇪🇸 A typical Spanish dish
"Huevos a la Manchega" are a classic of Spanish cuisine. These are eggs cooked in a compote of tomatoes, peppers, onion and basil. I've added zucchini and, traditionally, chorizo, but as I don't like it, I've replaced it with white ham.

💡 Frequently Asked Questions :
Cooked eggs don't keep well, as they harden quite quickly. If you want them runny, prepare the vegetables beforehand (up to 2-3 days earlier), and add the ham and eggs just before serving.
I wouldn't recommend it.
Tomatoes: June to September included.
Peppers: same
Zucchini: May to October included.
When it's not the right season, you can turn to frozen vegetables.

Spanish eggs
Ingredients
- ⅓ cup ham cut in cubes
- 1 tomato
- 1 zucchini
- 1 yellow onion
- 1 garlic clove
- 1 red bell pepper
- 1 yellow bell pepper
- 4-5 basil leaves
- 2 teaspoons oregano
- Salt
- Pepper
- 1 tablespoon olive oil
Instructions
- Place the zucchini, tomato, peppers, onion and garlic in a frying pan.
- Add olive oil and oregano, cover and simmer over low-medium heat for 1 hour, stirring occasionally.
- Once cooked, add ham and make two wells into which you break the eggs. Let them cook for a few minutes until the white of the egg is completely white.
- Serve on plates and add a few basil leaves. Enjoy!
