Katsu Curry is a Japanese dish consisting of breaded and deep-fried meat (often pork in Japan), served with a vegetable curry and a creamy sauce. It's milder than the Indian curry we're used to, but also thicker and less spicy.
Like its cousin the Katsudon (the same principle of breaded and fried meat, served with a soy and sake omelette, rice and fresh coriander), this ultra-gourmet Japanese recipe will take you on a journey and delight your taste buds!

To make this recipe gluten-free, use gluten-free flour, gluten-free soy sauce and do not use Panko breadcrumbs, which contain gluten: use normal breadcrumbs. There are also Japanese curry cubes and gluten-free tomato paste.
As for Japanese rice, it's normally gluten-free, but be careful as this can vary from variety to variety.

Japanese Pork Katsu Curry (Tonkatsu)
Ingredients
For the breaded pork
- 9 oz pork loin boneless
- 4 tablespoons all-purpose flour
- 1 egg
- 4 tablespoons Panko breadcrumbs
- Salt to taste
- Pepper to taste
- ½ teaspoon garlic powder
- Frying oil
For the curry
- A drizzle olive oil
- ½ onion
- 1 large garlic clove
- 4 small carrots
- 3 small potatoes
- 2 cubes Japanese curry roux
- 1 tablespoon tomato paste
- 1 ⅔ cups water
- 2 tablespoons soy sauce
For the side
- ¼ cup sushi rice
- 1 handful sesame seeds
- 4-5 cilantro leaves
Instructions
- Put the pork loin through a plate of flour, then through another plate with beaten egg, and finally through a plate of Panko breadcrumbs that you've previously mixed with salt, pepper, and garlic powder.
- Heat frying oil in a pan. Once it reaches 300°F/150°C, place your pork loin in it. Cook it for 10 minutes on each side until it's golden brown.
- Meanwhile, peel and slice the carrots, potatoes, and onion.
- Sauté the vegetables with the minced or pressed garlic in a hot pan with a drizzle of olive oil. Cook over high heat for 10 minutes, stirring often to prevent sticking.
- Then, add water, tomato paste, soy sauce, and curry cubes. Cover and let it cook for fifteen minutes until the sauce thickens, stirring occasionally.
- Cook the rice according to the package instructions, drain it, and place it in a plate with the vegetable curry and breaded pork. Sprinkle with fresh cilantro leaves and sesame seeds, and itadakimasu (enjoy your meal)!

- Since pork is an animal that can carry diseases transmissible to humans, I've chosen a slower cooking method to ensure the meat is thoroughly cooked on the inside and the breading is golden on the outside.
- You can replace it with chicken cutlets if you want.
