A change from traditional apple pie
I love apple pie, and the one my Mum makes is a bit like my Proust's madeleine. I used to have them for snacks when I was little... But for once, I was in the mood for a change! So what could be better than a pear tart?
Super quick to prepare
This delicious tart takes just 10 minutes to prepare! It's made with shortbread crust covered with almond cream (homemade of course), pears, a light drizzle of honey and flaked almonds for crunch. Believe me, she's sublime...
When do you eat pears?
From August to March included, so you can repeat this marvel for quite some time!

Chef's Tip
As European, I'm used to working in grams and milliliters. For savory dishes, the American measuring system can work just perfectly. But for anything sweet, I really recommend using a digital scale, which is much more precise. That way, you'll be sure to succeed with your recipes.

French pear pie
Ingredients
- 1 shortcrust pastry
- 3 large tablespoons unsalted butter softened
- ¾ cup almond meal
- 1 egg
- ⅓ cup sugar
- 4 pears
- 1 drizzle honey
- 1 handful sliced almonds
Instructions
- Preheat oven to 392°F/200°C. Roll out the shortbread dough in the tin and poke holes in it with a fork, so that the dough doesn't puff up during baking.
- Next, make the almond cream by mixing the soft butter with the almond meal. Add the egg, then the sugar and mix well until smooth.
- Peel the pears, halve them and remove the uneaten part. Cut them lengthwise into thin slices.
- Spread the cream over the pastry, then add the pear slices, as for a Bourdaloue tart. Finally, add a light drizzle of honey and the slivered almonds.
- Bake in the oven for 30 to 40 minutes and enjoy warm - it's a real treat!
