🧀 Ingredients
You can find a full list of ingredients and measurements in the recipe card below. Here are a few ingredient notes to make this French onion pasta recipe.
- Parmesan cheese - I really recommend buying it in block and grate it yourself at the last moment, it's soooo much better!
- Onions - go for large onions, I recommend going for white or yellow onions. It will look like a lot of onions, but don't forget that they reduce while cooking.
- Dry white wine - Sauvignon blanc, Chardonnay, Pinot Grigio, Chablis, etc...
- Dry pasta - regarding the pasta form, you can go with whatever you like - rigatoni pasta, etc...as long as you go with pasta that cooks at least 7-8 minutes.
- Butter - I use unsalted butter, but you can use semi-salted butter (just make sure to reduce the amount of salt at the end) or olive oil if you prefer.
- Garlic - if you want to choose your garlic carefully so you do not encourage the slavery of Chinese prisoners, read my Eco Tips on the subject.
🌶Variations
Feel free to change this recipe to go with your tastes. I suggest several options:
- Vegetarian - use a Parmesan cheese without animal rennet, or replace it with a cheese that does not contain animal rennet. And replace chicken stock with vegetable broth or stock.
- Spice it up with a pinch of Worcestershire sauce
- More veggies - add Cremini mushrooms with the onions, at the beginning of the recipe.
- Protein - add cooked and seasoned ground beef at the end of the recipe.
- Broth - replace chicken stock with beef broth or beef stock.
- Cheesier - add burrata cheese or Gruyere cheese, or replace Parmesan cheese with one of those suggestion (or both!).
This recipe has not been tested using any other substitutions. If you do try substituting ingredients, it may not turn out as it's meant to. Please leave a comment below letting me know if it worked out!

✨How to make this viral pasta recipe?

- Make a julienne with your onions: thinly slice them then use your fingers to break slices into thin strips.
- Melt butter in a large pan and when melted, add the sliced onions.
- Cook for 20 to 25 minutes over medium-high heat, stirring often with a wooden spoon so it doesn't stick.
- Your onions should have a deep golden brown color at the end.
- Add the chopped garlic, two tablespoons of water and cook for a further 5 minutes.
- Now add the thyme sprigs.
- Deglaze with white wine and let it evaporate for a few minutes.
- Add the uncooked pasta, chicken stock and cook following the packaging directions for al dente pasta.
- Finish with heavy cream, a generous pinch of salt, black pepper, freshly grated Parmesan cheese and sprinkle with thyme sprigs or fresh parsley. Enjoy!
👩🏻🍳 Chef's tips
- Stir the onions every 2-3 minutes, so it doesn't stick to the bottom of the pan.
- Every pasta shape has its own cooking time, so adapt. But I don't recommend going for pasta that cooks for less than 7-8 minutes.
- Taste your pasta after the cooking time is over, it's the best way to know if they're done or not.
- If needed, add more liquid (broth or if you don't have leftover, water) to finish cooking.
💡Frequently Asked Questions
Yes! You can double all the ingredients except for the stock. Start with 1.5x and watch very closely while cooking. If it sticks at the bottom of the pan while pasta are cooking, just add more liquid.
Yes, you can deglaze with a bit of stock instead!
❄️ Storage
Store - let the pasta dish cool at room temperature. Then place it in an airtight container in the refrigerator for up to 4 days.
Reheat - because of the cold of the refrigerator, they might loose some of their creaminess. Add 1 to 2 tablespoons of chicken stock (or water) before reheating in a microwave safe dish.
