    Easy microwave popcorn (3 ways)

    This microwave popcorn is ready in 5 minutes and perfect for a TV night or movie afternoon! I offer 3 different toppings: sweet with homemade caramel...and savoury with cheddar sauce or simply salted butter. It's much simpler than pan-frying, where the cooking time is super long and the corn kernels often burn.

    You can find a full list of ingredients and measurements in the recipe card below.

    • For the popcorn: popcorn and vegetable oil.
    • If you choose caramel as a topping, to have sweet popcorn like in the movies: white sugar, soft butter and full-fat cream.
    • If you choose the cheddar sauce: milk, flour, cheddar cheese (I recommend you grate a block of it yourself, as it melts better and tastes better!), paprika, cayenne pepper and pepper.
    • For the salted butter: soft butter and salt. I find that the semi-salted butter lacks salt in this recipe.

    You can also customize with spices (cumin or curry, for example), herbs (basil, oregano, parsley...), other cheeses like Parmesan or even cinnamon or a little gingerbread mix for the sweet version.

    How to make popcorn?

    It's very simple: pour the popcorn into a bowl, cover with cling film, poke holes in it and microwave for 1-2 minutes. Repeat if necessary until all the corn kernels have turned into popcorn.

    Be sure to use popcorn. There are several versions, and only this one can make the popcorn you see in the movies.

    What if I have leftover homemade caramel?

    You can store it in a jar (like a sauce pot) and put it in the fridge. It will keep for about 1 month.
    Use it in cakes, pies, tarts (apple tart, pumpkin tart, etc.), pancakes, vanilla ice cream, etc.

    What if I have leftover cheddar sauce?

    Use it in pasta - it's delicious! It's a bit like mac and cheese (the real recipe here).

    Once cooked, homemade popcorn doesn't keep long. I usually put it in a glass jar once it's nice and cold, and keep it that way overnight.

    Easy microwave popcorn (3 ways)

    This microwave popcorn is super-simple and ready in 5 minutes. For the toppings, I offer 1 sweet and 2 savory versions.

    Ingredients

    For the popcorn:

    • 3.5 ounces popcorn kernels
    • 1 tablespoon vegetable oil

    Option 1: Homemade Caramel (for 3.5 ounces popcorn kernels):

    • 3.7 oz white sugar
    • 2.1 oz semi-salted butter
    • 5.3 oz heavy cream

    Option 2: Cheddar Cheese Sauce (for 3.5 ounces of popcorn kernels):

    • 8.8 oz milk
    • 0.85 oz of all-purpose flour
    • 3.5 oz shredded cheddar cheese
    • 2 teaspoons sweet paprika
    • A pinch Cayenne pepper
    • Black pepper to taste

    Option 3: Salted Butter (for 3.5 ounces of popcorn kernels):

    • 1.8 oz unsalted butter
    • ½ teaspoon fine salt

    Instructions

    • Place your popcorn in a microwave-safe bowl. Add the vegetable oil, cover with cling film and poke a few holes with a fork.
    • Microwave at full power for 1 to 2 minutes. Take a break and repeat the operation (with breaks) until all the corn kernels have turned into popcorn.

    Option 1: Homemade caramel

    • Melt the sugar in a saucepan over low heat until it caramelizes, without stirring. Meanwhile, briefly heat your heavy cream in the microwave.
    • Once it starts to caramelize, add the coarsely chopped butter and stir briskly (it's normal for it to boil).
    • Add the hot cream and stir for 5 minutes, until thickened. Remove from heat, cool for 5 minutes and pour into a container.

    Option 2: Cheddar sauce

    • Heat the milk in a saucepan. Meanwhile, sift the flour into a separate bowl and grate in the cheddar cheese.
    • Once the milk is steaming, turn down the heat to low and add the flour. Mix well and add the cheddar.
    • Add the paprika and pepper, then leave the sauce to thicken, stirring continuously.

    Option 3: Salted butter

    • Melt the butter in the microwave, pour over the popcorn and add the salt. Taste and adjust if necessary.
